There’s no such thing as too many watermelon recipes! When the temperature soars and days get hotter, all you need is to lay by the side of the pool with a refreshing drink to sip. Summer days make me crave sweet watermelon, and I try to use it in a million ways. Icy cool watermelon granita, frozen watermelon smoothie, or refreshing watermelon mojito.
One of the best light and refreshing summer drinks!
Ingredients
- Watermelon: Seedless watermelons are best. To get slushie consistency, freeze watermelon for a couple of hours before blending.
- Lemon juice: If you have fresh limes, use fresh lime juice; it works better than lemon juice. I used freshly squeezed lemon juice. It adds a hint of tang to the drink.
- Mint – Fresh mint adds flavor, taste, and amazing freshness to granita. You can swap mint with fresh basil as well.
- Loads of ice.
- Sweetener (optional)– for a sweeter taste, you can add maple syrup, honey, or sugar to watermelon when juicing it. I skipped the sweetener as the watermelon I used had enough sweetness.
Step-by-Step Instructions
Step 1: Cut the watermelon in half. Remove the outer green rind.
Step 2: Cut it into thick round slices. Cut each round slice into cubes. If too many seeds, try to remove them. A few seeds on watermelon are ok.
Pop watermelon in the freezer for a couple of hours before juicing. I skipped freezing.
Step 3: Add all ingredients into a blender.
Step 4: Blend it for a couple of minutes until well blended.
Pour into serving glasses, and serve immediately.
