Watermelon Mojito Recipe
Light refreshment on hot summer days are always welcome. And mojito is a great option for it. If you are a mojito fan, then you would definitely want to include this cocktail into the list of your favorite mojitos.
Mojitos is definitely delicious drink that no one can resist. But most of them are sugar loaded. Though the natural sweetness from watermelon itself should be enough for a mojito, some of us definitely need that extra sweetness.
Personally I don’t like sugary sweet mojitos. A nice kick from rum in mojitos are great, but the over load of sugar in the cocktail knocks me out pretty fast and gives a bad hangover. Alcohol and sugar (rather over load sugar) is a bad thing for me. I don’t like the hangover at all.
I always make homemade mojitos less sweetened. And when having it out, I personally request the bartender to make it sugarless or less sugar.
This mojito recipe is lighter, we have added sugar, but in much lesser quantity. Go for natural sweeteners like honey if you prefer it. Especially if you going to be sipping on a couple of glasses full on hot summer day.
In this recipe, powdered sugar is used and in less quantity. Leave out sugar totally if you feel watermelon sweetness would be enough.
Mojitos can be made so many ways. Watermelon is one of the best choices for summer mojito. It’s definitely a fun twist to the classic white rum mojito. A perfect summer cocktail that great for backyard BBQ parties.
If making it for kids entertainment, leave out white rum. Kids would love the refreshing sweet fruity watermelon taste in the mojito. With loads of ice in, it’s perfect summer pool party as well.
Simple syrup is mostly used in any mojito preparation. But using sugar does work as well. We used powdered sugar to help dissolve it in mojito faster. Crystal white sugar needs extra stirring to make it dissolve completely.
The sweetness from fresh ripe watermelon combined with zing from lime juice, kick from white rum, freshness of mint leaves and loads of ice – a perfect cocktail to sip on sitting on pool side on hot summer afternoon or for evening BBQ backyard party.
What Goes In Summer Watermelon Mojito Recipe
1 small watermelon, cubed
3 oz white rum
3 limes, juiced
15 mint leaves, muddles
15 mint leaves, fresh
1 tablespoon powdered sugar
2 cups ice
Makes 4 – 6 servings.

How To Make Watermelon Mojito
Use fully ripe watermelon for mojito recipe. Remove the sweet, pink flesh of watermelon. We did not bother to remove the seeds. Blend it and strain it in fine mesh sieve. Saves so much time.
Use high power blender or food processor to juice watermelon cubes. Strain the juice, pour into glass jar and refrigerate until use.
Use citrus squeezer to extract lime juice. Refrigerate it. If you like slushie watermelon mojito, freeze lime juice.
For sweetener you can use simple syrup or sugar. To make simple syrup boil ½ cup sugar in ½ cup water. Once sugar dissolves, remove from heat and let it cool completely.
Muddle 15-20 mint leaves. Smash it well so all natural oil and flavors of mint is released. Do not puree mint.
Use a glass pitcher to stir everything. Or use a cocktail shaker.
Into a pitcher add powdered sugar or simple syrup which ever you are using. Pour squeezed lime juice. Add in ice. Using a wooden cocktail stirrer stir until sugar is completely dissolved.
Next add muddled mint, lime slices, watermelon juice, white rum. For extra flavors add some more fresh mint leaves, few cubes watermelon (I froze watermelon cubes and added it. But the time you serve this mojito, frozen watermelon cubes will soften and make the mojito much cooler).
Stir everything together and while stirring smash mint and lime to release some of it’s fresh flavors into the mojito.
Refrigerate it until ready to be served.
Into mojito glasses, add few extra ice, some lime slices and pour watermelon mojito into the glasses.
Garnish with fresh mint leaves and serve immediately.
