Breakfast pizza with bacon and eggs
Having pizza for breakfast is a luxury to enjoy. To make it interesting and healthy, add more toppings like cherry tomatoes and spinach. Don’t forget crispy bacon.
This breakfast pizza uses a quick food processor pizza dough recipe. The dough itself needs only 5 minutes of prep work and about 1 to 2 hours of rising time. You can make pizza dough the night before and pop the dough in the refrigerator for slow rising. The next morning, you’re ready to get on with breakfast pizza.
Ingredients

Additions and substitutions
- You can add any toppings of your choice, spinach, sauteed caramelized onions, or sauteed onions and peppers.
- Instead of whole eggs, you can add scrambled eggs to the pizza.
- Mozzarella cheese can be substituted with white cheddar or sharp yellow cheddar cheese.
- I prefer to make pizza dough at home. Feel free to use refrigerated store-bought pizza dough or even crescent rolls to make pizza.
Step-by-step Instructions

Step 1: Add olive oil and minced garlic to a bowl.
Step 2: Mix well, keep aside.
Step 3: Make pizza dough at home with just 5 minutes of prep work, or use store-bought refrigerated pizza crust.
Step 4: Lightly knead the dough (homemade) and divide into 4 equal portions. If using store-bought, unroll the refrigerated pizza.

Step 5: Sprinkle a little cornmeal on a baking sheet or pizza stone.
Step 6: Work on pizza dough by stretching and pulling it to shape it.
Step 7: Prick thoroughly with a fork.
Step 8: Brush olive oil, garlic mix.

Step 9: Bake in preheated oven at 450°F for about 3-4 minutes or until pizza crust is lightly golden brown.
Step 10: Sprinkle half of the shredded mozzarella cheese, cherry tomato halves,
Step 11: Add crispy bacon bits on top.
Step 12: Bake in the oven at 450°F for 2 minutes or until the cheese melts.

Step 13: Remove pizza from oven, sprinkle remaining cheese on top.
Step 14: Crack 2-4 eggs on top of the pizza between the shredded cheese.
Tip: adding a little shredded cheese just before you crack open eggs helps make a ‘nest’ for eggs to sit in, and the eggs don’t slide off.
Season with salt and pepper to taste. Sprinkle half of the green onions.
Bake at 450°F for 7 to 9 minutes or until egg white is set and cooked. You can adjust the time depending on how you like your eggs. If you like runny yolk eggs, bake for less time, and for fully cooked eggs, increase the time in the oven.
Garnish with fresh parsley, extra green onions, and crushed red pepper flakes. Cut into slices and enjoy!
Best Tips
- Use fresh active dry yeast.
- If yeast does not rise (bloom), do not use it. Discard and make a fresh batch.
- Adding a little shredded cheese just before you crack open eggs helps make a ‘nest’ for eggs to sit in, and the eggs don’t slide off.
