Why does this recipe work?

  1. Grilling a pineapple slice will enhance its natural sweetness and add a caramelized smoky flavor to it.
  2. Soaking pineapple in rum and brown sugar makes it absorb all the wonderful flavors. When you grill it, it’s a real summer treat.
  3. It’s really easy to make it.
  4. A great summer treat for a BBQ party or backyard summer party.
  5. Nothing can beat char-grilled pineapple slices topped with ice cream along with rich rum sauce on top.

Ingredients

all ingredients for grilled pineapple are arranged on a wooden table.
  1. Pineapple – Choose the perfect ripe pineapple for this recipe. Choosing ripe pineapple (with a little bit of resistance) is crucial. Tug the center leaf on the pineapple, if they come off easily it’s ripe. Cut thick pineapple slices fresh just when ready to grill. You can buy pre-cut pineapple slices from the store. If you plan to cut it on your own, this how to cut a pineapple may come in handy.
  2. Rum – dark rum is best. You can also mix in coconut rum to add more flavor. If you making it for kids, simply skip rum, soak pineapple slices in dark brown sugar and cinnamon powder mix, and drizzle vanilla extract on top.
  3. Brown sugar – use dark brown sugar for a richer taste. Feel free to use light brown sugar if needed.
  4. Vanilla extract – enhances the flavor of the fruit.
  5. Cinnamon powder (ground cinnamon) – the spice adds an earthy note to the pineapple.

Variations

  1. Switch brown sugar with raw honey.
  2. Use a dash of nutmeg for more flavor.
  3. Grill with just butter. The natural sugars in pineapple will give a nice caramelization and butter with add richness and flavor to it.
  4. Sprinkle chili powder (my absolute favorite). The wonderful balance of sweet, heat, and sour will make your mouth salivate.

Step-by-step Instructions

Ways to use grilled pineapple

  1. Add it to grilled chimichurri chicken or pork chops – a perfect summer meal!
  2. Try with burgers! Ditch tomato slices and place a caramelized pineapple over the meat patty. So YUM!
  3. Add it to tilapia fish tacos!
  4. The smoky caramelized flavor works great with avocado corn salads or salsa (chop and add).

I’ve never thought to grill pineapple, but what a great way to bring out even more of the natural sweetness. We love grilling all summer long and I can’t wait to add this to the rotation.

A cup of rum as a pineapple marinade – you are speaking my language!! I love the simplicity of this dessert, but just because it’s easy doesn’t mean it’s not delicious! The sweet pineapple with the boozy rum and the caramelization from the grilling is just divine!
