Ingredients
- Pineapple – Choose the perfect ripe pineapple for this recipe. Choosing ripe pineapple (with a little bit of resistance) is crucial. Tug the center leaf on the pineapple, if they come off easily it’s ripe. Cut thick pineapple slices fresh just when ready to grill. You can buy pre-cut pineapple slices from the store. - Rum – dark rum is best. You can also mix in coconut rum to add more flavor. If you making it for kids, simply skip rum, soak pineapple slices in dark brown sugar and cinnamon powder mix, and drizzle vanilla extract on top.
- Brown sugar – use dark brown sugar for a richer taste. Feel free to use light brown sugar if needed.
- Vanilla extract – enhances the flavor of the fruit.
- Cinnamon powder (ground cinnamon) – the spice adds an earthy note to the pineapple.
Variations
- Switch brown sugar with raw honey.
- Use a dash of nutmeg for more flavor.
- Grill with just butter. The natural sugars in pineapple will give a nice caramelization and butter with add richness and flavor to it.
- Sprinkle chili powder (my absolute favorite). The wonderful balance of sweet, heat, and sour will make your mouth salivate.
Step-by-step Instructions
Step 1: Prep the glaze by whisking rum, brown sugar, cinnamon powder, and vanilla extract well.
Step 2: Cut pineapple into thick slices.
Step 3: Marinade pineapple – Soak pineapple slices in rum, and brown sugar sauce for about 30 minutes or even overnight inside the refrigerator.
Step 4: Heat the outdoor grill or use the stove-top grilling pan method. Grease grill with butter or neutral oil (like canola oil). Grill pineapple soaked in rum-brown sugar marinade for 3-5 minutes on one side.
Step 5: Once the pineapple has wonderful browned grill marks on one side, carefully flip and cook on another side until caramelized and grilled to perfection.
Step 6: Pour the rum-sugar marinade into a saucepan.
Step 7: Simmer and boil on low heat with frequent stirring.
Step 8: Cook until the sauce is thickened, with a pourable consistency.
Serve it hot, topped with vanilla ice cream and a generous drizzle of brown sugar sum glaze on top.
Ways to use grilled pineapple
- Add it to grilled chimichurri chicken or pork chops – a perfect summer meal!
- Try with burgers! Ditch tomato slices and place a caramelized pineapple over the meat patty. So YUM!
- Add it to tilapia fish tacos!
- The smoky caramelized flavor works great with avocado corn salads or salsa (chop and add).
