Grilled Potatoes in Foil Packets

Grilled foil-packed potatoes are perfect for BBQ dinner or any meal. Easy to assemble everything into foil packets and grill it over a fire, grill, or oven.

 Why does this recipe work?

  1. Best summer side dish that serves great with any grilled meat such as grilled chimichurri chicken, or grilled tilapia, with lamb chops, and pork chops.
  2. It’s a wonderful candidate for camping recipes.
  3. You’ll need simple basic ingredients.
  4. The recipe is versatile, you can adapt and change it as per your preference and availability of ingredients.

Step-by-step instructions

Step 1: Dice potatoes into 1-inch cubes. You can use a mix of red and yellow potatoes.

Step 2: Into a large bowl add diced potatoes and all the ingredients  – olive oil, minced garlic, thyme, rosemary, salt, pepper, cheddar cheese, and Parmesan. You can use seasoning salt to season the potatoes.

Step 3: Mix until everything comes together.

Step 4: Divide into portions. Fill foil packets with potato in the center and fold the foil.

Step 5: Grill it on fire, BBQ, or in the oven. Cover the potatoes with a lid if you use the grill. The lid helps trap the heat inside and just cooks potatoes all the way through. Takes about 20 to 30 minutes.

Once grilled, remove packets from the fire. Open and fold the ends of the foil packs. Load it with green onions, cheddar, Parmesan cheese, and sour cream on the side. Serve it directly in foil packets. It serves great on the sides of grilled meat. You can serve it alongside shish kebab.

Tips

  1. If you want crispy bacon bits, consider frying bacon in a pan first and topping it after the potatoes are grilled in foil packets. This will keep bacon crispy.
  2.  Place a cube of butter over the potatoes, before folding the wrap to close. Butter will give it a rich taste and potatoes turn more delicious! This is an optional step.
  3. Don’t forget to pierce tiny holes into the packets. It’ll let steam out while grilling.
  4. On fire grill – 20-30 minutes, avoid placing it on direct flames.
  5. Bake in oven – at 375 degrees F for about 40 minutes or until potatoes are tender.

Recipe FAQS

How long to grill foil-packet potatoes?

Grill foil packet potatoes over the grill for 20-30 minutes or until a toothpick slides through the potatoes easily.
Please note grilling time will vary depending on the temperature variations in your grill. Adjust the time to grill accordingly.
Oven grilling –
Potato packed can be grilled in the oven at 425F for about 20 minutes or until a toothpick slides through the potatoes easily.

Do you have to boil potatoes before grilling?

No, there is no need to boil potatoes before grilling. Potatoes will cook in the foil packets with the heat generated inside the packets.

Ingredients
  

  • 1 lb small potatoes Yukon or red potatoes or a mix of both red and golden Yukon potatoes
  • 3 tablespoon olive oil
  • 2 tablespoon garlic minced
  • Salt to taste
  • Pepper to taste
  • 2 tablespoon fresh thyme finely chopped
  • 3 tablespoon fresh rosemary finely chopped
  • 4 bacon strips cut into small pieces
  • 1 cup cheddar cheese
  • ½ cup Parmesan cheese
  • 3 Cubes of butter optional

For Garnish –

  • Extra cheddar cheese for garnish
  • Sour cream for garnish
  • Green onions

Instructions
 

  • Dice potatoes into 1 inch cubes.
  • Add diced potatoes, olive oil, minced garlic, thyme, rosemary, bacon, salt, pepper, cheddar cheese, and Parmesan. Mix well.
  • Divide into 3 portions.
  • Arrange potatoes on a large piece of greased foil.
    Pro-Tip: Place a cube of butter over the potatoes, before folding the wrap. Butter will give it a rich taste and potatoes turn more delicious! This is an optional step.
  • Fold the edges to make a foil packet.
  • Pierce a few holes into the packets to let steam out while grilling.
  • Grill it on a campfire, BBQ, or in the oven.
  • Cover the potatoes with a lid if you use the grill. The lid helps trap the heat inside and just cooks potatoes all the way through.
  • Takes about 20 to 30 minutes.
  • Once grilled, remove packets from fire.
  • Open and fold the ends of the foil packs.
  • Load it with green onions, cheddar and Parmesan cheese, and sour cream on the side. Serve it directly in foil packets.
  • It serves great on the sides of grilled meat.
