Roasted parmesan potatoes are tossed in parmesan garlic seasoning, roasted to crispy perfection in the oven and finished off with crispy bacon bits on top. This garlic Parmesan roasted potatoes are one of the best side dish that you can serve with Sunday roast or any meal.

Garlic Parmesan roasted potatoes

1. Parmesan potatoes are utterly delicious! Potatoes are tossed with parmesan, garlic, herbs, paprika and olive oil and roasted until crispy and golden on the outside, fluffy on the inside.

2. Potatoes are loaded with flavors and makes the best side dish for any meal. It pairs beautifully with Sunday roast.

3. A fabulous side dish that needs very little effort. Just chop potatoes into equal sizes, toss with parmesan, garlic, paprika, herbs and olive oil, spread on sheet pan into even layers and roast until crispy golden!

4. To make it even better, add crispy bacon. Because bacon makes everything better!

5. From roast chicken to steaks, these oven roasted parmesan potatoes goes pretty much with any meal.

Ingredients you’ll need

Here’s what you’ll need-

  • 1.5 pounds baby potatoes (can use regular baby potatoes or baby red potatoes)
  • 3 tablespoon olive oil
  • 5 cloves garlic (minced)
  • 1 tablespoon Italian seasoning
  • ½ cup Parmesan (fine grated, “sand” like parmesan is best)
  • ½ teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne
  • Salt & pepper to taste
  • ¼ cup crispy bacon (crumbled) – optional
  • Fresh parsley for garnish

Potatoes: choose any of these potatoes- baby potatoes, baby red potatoes, fingerling potatoes, small Yukon potatoes.

Garlic: using fresh garlic adds fresh garlic flavors. I love garlic, 5 cloves of garlic was perfect for my taste. If you hate garlic, reduce the number of cloves to suit your taste preference. You can substitute fresh garlic with garlic powder as well. Use ½ teaspoon to 1 teaspoon garlic powder.

Parmesan: to get crispy potatoes, use “sand” parmesan cheese that you find in refrigerator section. “sand” like cheese helps crisp potatoes well. Freshly grated parmesan can also be used, make sure they are grated super fine. Regular shredded parmesan does not help crisp up potatoes well.

Bacon(optional, highly recommended): because bacon makes everything better. Crispy potatoes and crispy salty bacon bits are amazing together.

How to make parmesan potatoes?

Making this epic parmesan potatoes that are crispy on the outside and fluffy inside is really easy than you would imagine.

Choose the potatoes you want to cook with.

Pre-heat oven at 400F.

Scrub potatoes to get rid of dirt. Rinse well and pat dry completely. Do not bother peeling the skin off.

Cut potatoes into halves if they are really small and cut slightly bigger ones into quarters.

Mix together fine grated parmesan cheese, minced garlic, onion powder, smoked paprika, cayenne pepper, Italian seasoning, pepper to taste.

Add potatoes to the bowl of seasoning. Toss well to coat all potatoes with the parmesan seasoning.

Add olive oil to metal baking sheet. Spread oils evenly all over.

Transfer potatoes coated in parmesan onto baking sheet. Arrange in single layer with cut side down.

Roast in pre-heated oven at 400F for 30-40 minutes until bottom is starting to turn golden. Flip potatoes once or twice during cooking to ensure even browning.

Once down, let it cool for few minutes.

Toss potatoes with crispy bacon bits, sprinkle fresh parsley for garnish.

Serve immediately with any meal.

💭Tips to make crispy roasted parmesan potatoes

  1. Use metal sheet pan. Do not line metal baking sheet with aluminum paper. It will loose some of its crispiness.
  2. Cut potatoes into even size.
  3. Arrange potatoes with cut side down so it browns beautifully.
  4. Use sand-like parmesan for best results. You can find sandy parmesan cheese in refrigerator section. Do not use pre-grated parmesan cheese, pre-grated parmesan won’t crisp up the potatoes. You can freshly grate parmesan but use fine grater.
  5. For extra crispness, broil potatoes for 2-3 minutes after it’s done roasting.

How to serve parmesan potatoes?

These roasted parmesan potatoes are best served as side dish.

It pairs great with Sunday roast chicken or steaks or with fish.

Use it as toppers for salads and soups like you would use parmesan crisps or croutons.

My family loves these roasted parmesan potatoes served as finger food with a boom boom sauce for dipping.

What to do with leftovers?

Very unlikely there will be leftovers as these parmesan potatoes are so addictive it flies fast. If you have leftovers, cool it completely and transfer to air tight container. Store in refrigerator for 2 days.

Reheat in oven until heated through before serving.

You can also turn leftover potatoes in into potato salad.

What variety of potato to use?

Choose any of these potatoes- baby potatoes, baby red potatoes, fingerling potatoes, small Yukon potatoes.

What is sand like Parmesan?

It’s real Parmesan cheese that looks like sand and can be bought from refrigerator section.

Can I use pre-grated Parmesan?

No, do not buy pre-grated parmesan from store. It won’t work for this recipe, it doesn’t make potatoes crispy.
You can buy block cheese and freshly grate it. You must use fine grater.

Can I bake in glass baking dish?

I highly recommend you use metal sheet pan to roast potatoes. Potatoes might stick to glass baking dish.

Tips for golden brown roasted potatoes?

Cut potatoes into even sizes
Use fine sand like parmesan cheese
Place cut side down on baking sheet
Roast at high temperature
For extra crispness, broil potatoes for 2-3 minutes after it’s done roasting.
