Easy Loaded Deviled Eggs With Bacon and Chives

These loaded deviled eggs with bacon are very addictive and so easy to make. Upgrade the classic deviled eggs recipe with rich, savory yolks, creamy mayonnaise, sour cream, cheese, Dijon, mustard, and salty, savory bits of bacon. It’s perfect for easter, game day, or game day gatherings!

Why Does This Recipe Work?

  1. Impress your guests and family with this must-have during Easter parties, summer picnics or potlucks, or holiday parties.
  2. Seriously addictive!
  3. Bacon makes all things better.

Ingredients

  1. Perfect hard-boiled eggs – have a few extra hard-boiled eggs than you plan to serve. Trust me, you’ll need some extra eggs. Those not-so-perfect hard-boiled eggs that aren’t pretty enough to be served can be replaced with the extra ones.
  2. Mayonnaise – Use full-fat regular mayonnaise for the best taste.
  3. Sour Cream – adds to the creaminess of the yolk mixture. It helps balance the creamy-rich yolk filling.
  4. Dijon Mustard – A hint of Dijon mustard to enhance the flavor and give it a wonderful savory touch.
  5. Cheddar Cheese – why not! Cheese makes everything taste better.
  6. Bacon – Crispy bacon bits in deviled eggs add unbelievable texture and taste. How can you make deviled eggs better? Add bacon to it!
  7. Chives – You could use green onions or chives for added freshness and texture.
  8. Salt & Pepper – Season to taste.

Perfect Hard-Boiled Eggs

Use a week-old egg. Place eggs carefully in water and cover completely by 1 inch.
2. Add a pinch of kosher salt or ¼ teaspoon vinegar.
3. Bring it to a boil covered on high flame.
4. Once water starts boiling, reduce the flame, uncover, and let eggs cook in gentle boiling water for 6-7 minutes.
5. Remove eggs from pot immediately and immerse in a bowl of ice water for a few minutes.
6. Shell your eggs immediately. Shells peel so easily.

How to Make

Step 1: Fry bacon strips in a pan until browned and crispy. Remove the bacon from the pan and let it cool for a minute. Crumble the bacon into bits and set aside.

Step 2: Follow the instructions mentioned to make perfect hard-boiled eggs. Peel hard-boiled eggs, cut in half lengthwise. Separate the yolk from the whites. Add the yolk to a bowl, cream it using a fork.

Step 3: Add mayonnaise, sour cream, mustard, grated cheddar cheese, crispy brown bacon bits, chives, salt (if needed), and pepper.

Step 4: Mix using a fork into a smooth creamy mix. Mix in grated cheddar cheese.

Step 5: Transfer the mix into piping bags fitted with a star nozzle.

Step 6: Pipe creamy yolk mix over egg white.

Sprinkle some more bacon bits and chives. Pop these in the refrigerator for a couple of hours before serving. Tastes great cold.

Tips

  1. Use a week-old egg to make hard-boiled eggs. Fresh eggs are hard to peel, and they are not ideal for deviled eggs.
  2. Tweak the filling to suit your taste buds, but remember to keep your filling simple to make sure the yolk shines through in the deviled eggs.
  3. Pop these in the refrigerator for a couple of hours before serving. Tastes great cold.

Ingredients
  

  • 6 hard boiled eggs
  • ¼ cup sour cream
  • 2 teaspoons mayonnaise
  • 1 ½ teaspoons mustard
  • 4 strips bacon
  • ⅓ cup chives
  • Pepper to taste
  • Salt if needed
  • ⅓ cup cheddar cheese grated

For garnish –

  • Crispy bacon bits
  • Chives
  • Smoked paprika to sprinkle on top Optional

Instructions
 

  • Fry bacon strips in a pan until browned and crispy. Remove fried bacon from pan and crumble it.
  • Follow instructions mentioned above to make perfect hard boiled eggs. 
  • Peel hard boiled eggs, cut into half lengthwise.
  • Separate egg yolk from egg whites.
  • Add yolk separately into a bowl.
  • To the bowl add mayonnaise, sour cream, mustard, grated cheddar cheese, crispy brown bacon bits, chives, salt (if needed) and cracked pepper.
  • Mash using fork into smooth creamy mix. Add grated cheddar cheese and mix it again.
  • Transfer egg yolk mixture into piping bags fit with star nozzle.
  • Pipe creamy yolk mix over egg white.
  • Sprinkle some more bacon bits and chives.
  • Devilled eggs can be refrigerated few hours before serving. It tastes better chilled. Once egg whites are filled with yolk mixture, make sure to serve them the same day.

    I still have hard boiled eggs from Easter. This is perfect way to use those leftovers. Actually I’m throwing a small party this weekend and this recipe is just perfect to surprise my guests. I bet everyone will love these.
