These baked Parmesan crisps are the easiest low-carb snack you’ll ever make. All you need is one ingredient, 5 minutes prep and 5 minutes in the oven. Delicious, gluten-free, KETO friendly and low carb!

Ditch potato chips. A new crunchy, salty snack is here! And it’s cheesy too. These are Parmesan cheese crisps! Gorgeous lattice pattern little disks are crunchy, salty and cheesy. It’s made generally with just one ingredient – PARMESAN CHEESE!
If you like, enhance the flavors of this cheese disk. Go for as simple as pepper to as complex as curry powder. Use anything in between too – garlic powder, cumin powder, cayenne pepper, red chili flakes, paprika, turmeric powder, Italian herbs, just anything your taste buds would love.
Cook’s Tip: I wouldn’t recommend adding coarse/sea(any) salt to the recipe. Parmesan cheese itself is salty enough.

Commercially available chips may be convenient and great grab and go snack option, but the reality is it’s super expensive. So little chips are sold at such high prices!
It’s quick, easy to make and fuss free recipe. The most crucial step is choosing the BEST quality Parmesan cheese block. NO pre-grated cheese please! Those are filled with fillers and additives. And if you use pre-grated cheese bought from super market, you are most likely to end up with toasted cheese powder and not disks.
For the heck of it, I tried to experiment this recipe with pre-grated cheese. What I found, the cheese did not turn bubbly when in the oven. It would not cohere. I ended up with almost powdery stuff. Though some of the disks did manage to hold the disk shape, it was dry and almost fell apart into powdery stuff when tried to hold it. Pre-grated cheese was utter failure!
A decent to good quality Parmesan cheese block is what you need to use. The better the quality of cheese, the better these crunchy crisps are going to taste. Grate cheese just before you are ready to make.
These Parmesan crisps are great paired with wine, or dipped in sauce. Just like the way you would dip your chips, dip these crunchy crisps in marinara sauce or salsa. These low carb chips aka crisps are great as salad toppers or over a bowl of soup(easily replace your croutons with gluten-free Parmesan crisps!)
Parmesan Crisps Recipe Ingredients
The recipe really needs just one ingredient. Parmesan cheese block. If you like you can enhance flavor with spices like pepper, cumin, turmeric, paprika, cayenne pepper or curry powder.

How To Make Parmesan Crisps
Are you convinced to make your own Parmesan crisps at home? Then let’s get started.
You can make these crisps plain, which is delicious on its own. Or flavor it up with some spices. Choice is yours.
Start by selecting the best Parmesan cheese block. Always choose cheese block, not pre-grated packed cheese.
Start grating Parmesan cheese block. I found using the fine grated hole works best.
Next key step is piling up the grated cheese on to baking tray lined with parchment paper or silicon mat. Make sure you leave enough space between the piles, so when cheese melts and bubbles up in oven, it has enough space to spread.
The size of the pile will decide how long these babies need to be in the oven. Keep the pile small, and don’t layer the cheese too much on top of each other. Spread cheese into thin layer so it bakes in the oven evenly and turns out crispy.
Leave enough space between each scoops of grated cheese, so they have enough space to spread and don’t melt together and you’ll end up with a sheet of cheese.
Once you spread cheese into little round shapes on the tray. Sprinkle with pepper.
Note – If using any other spices or seasoning ingredient like Italian herbs, mix those spices or herbs into grated cheese first and then spread cheese on baking tray, so the cheese is evenly mixed with the spices.
Bake it in pre heated oven at 375 degree F for 5 to 7 minutes until the edges begin to brown. Watch very closely, as they can burn fast if left even for few extra seconds in the oven.
Parmesan crisps come out crispier and saltier. Do not add any extra salt as parmesan is naturally very salty.
Once done, remove tray from the oven. If you try to remove cheese crisps soon as it’s out of oven, it will be soft. Give it a few seconds so cheese hardens and then gently remove crisps from oven using thin spatula. Serve fresh with sauce.
Can I Use Other Types of Cheese
Any hard cheese would work. You need to use cheese with less moisture so you get crispier chips. Parmesan or Romano works best!
Semi-hard cheese like cheddar would work too, but remember if you use cheddar alone, your crisps won’t be crispier. Using cheddar cheese alone will give you slightly soft and pliable crisps, but still delicious with wonderful cheddar flavor.
Use a mix of Parmesan and cheddar to get flavors of both cheese and they will be crispy.
If you want to experiment with different cheese, try with little cheese at a time to see how it turns out and if you like it go ahead with bigger batch.
Other Spice Suggestions
Well Parmesan crisps can be made plain with just the cheese. You get salty crispy snack. But these are so much better with spices added to it. Try it with a hint of pepper cracked on it before baking like we did.
- Or add in garlic powder
- Maybe cayenne pepper or paprika
- Little cumin powder is great
- Some red chili flakes
- Sprinkle with dried herbs or Italian seasoning
All of the above spice suggestions would really work. You’d get different flavors with each of them.
Can I Make Parmesan Crisps Ahead?
These low carb Keto Parmesan crisps are best serve fresh, hot, right off the oven. If you are planning to make it for a party and want to prepare it ahead of time, you can make it ahead. Ensure you store them in air tight containers once cooled. At room temperature, these would are good for about 2 days, I wouldn’t recommend to store longer.
Can I Freeze Parmesan Crisps?
Yes you can. Since Parmesan cheese can be stored in freezer, these crisps can also be stored in freezer. Place wax paper between each crisps and store in air tight freezer boxes. You can freeze it for upto 2 months.
Ways To Use Parmesan Crisps
These crisps can be served in so many ways. Serve it plain just like chips.
Serve it as salad toppings.
Use it in soups for keto friendly, gluten-free toppers. These crisps are great replacements for croutons.
Use it in hamburger.

- Place cheese scoops a few inches apart, as they will spread when cheese melts.
- If adding spices, add spices to grated cheese mix it to combine. Then scoop out cheese onto to baking tray.
- Keep the size of the piles small and don’t layer the cheese too thick. It won’t turn crispy.

Baked Parmesan Crisps
Ingredients
- 1 cup freshly grated Parmesan cheese
- ½ teaspoon pepper optional
Instructions
- Pre-heat oven at 375 degree F. Line baking tray with parchment paper or silicon mat.
- Using a small grater hole, grate Parmesan cheese.
- Scoop tablespoon of grated cheese on to baking tray. Continue placing little uniform mounds of cheese with few inches apart. Pat each mound to flatten into circle.
- Crack little pepper on each circle.
- Bake in pre-heated oven at 375 degree F for about 5 to 7 minutes, until it begins to turn brown on the edges.
- Watch very closely, as they can burn fast if left even for few extra seconds in the oven.
- Remove crisps from the oven. Let it sit in the pan for a minute. Carefully remove the crisps using thin spatula.
- These are best served hot, fresh out of oven. They will be crispier. Serve with any sauce of your choice as an appetizer or add it to your salads or soups.
