Parmesan – always use good quality Parmesan cheese block and grate it yourself. I experimented with pre-grated cheese and they did not turn bubbly and cohere when baked. It’ll end up powdery.
Pepper (optional) – You can enhance flavor with additional ingredients like ground pepper, Everything seasoning, ground cumin, turmeric, paprika, cayenne pepper, or curry powder.
Step-by-step instructions
Step 1: Use the best quality Parmesan cheese block.
Step 2: Grate it using a fine grater hole. It helps cohere and bind together when bubbling in the oven.
Step 3: Line up a baking tray with parchment paper. Add heaping tablespoon of grated Parmesan cheese spreading it in a thin layer. Make sure you leave enough space between the piles.
Step 4: optional – sprinkle crushed pepper (or other seasoning) on top.
Step 5: Bake in preheated oven at 375F for 5 to 7 minutes until the edges begin to brown. Watch very closely, as they can burn fast if left for a few extra seconds in the oven. The size of the crisps will decide how long they need to be baked.
Step 6: Once done, remove the tray from the oven. Give it a few seconds so the cheese hardens, remove the crisps from the oven using a thin spatula. Serve immediately with sauce.
Best cheese for cheese crisps
Any hard cheese would work, cheese with less moisture so it gets crispier when baked. Parmesan or Romano works best!
Semi-hard cheese like cheddar would work too, remember if you use cheddar alone, cheese crisps won’t turn crispier. You’ll get slightly soft and pliable crisps, but still delicious with wonderful cheddar flavor. Use a mix of Parmesan and cheddar to get flavors of both cheese and a perfect crispy texture.
