Peanut Butter Cornflake Cookies
Have you tried peanut butter and cornflakes combination? If you haven’t tried, you are missing a great deal. Sweet peanut butter and crunchy cornflakes makes it a wonderful combination.
A treat that is sure to win hearts of kids and adults. And you need to spend 15 minutes to get this done!
I’m a huge fan of quick and easy to make recipes and these cornflakes cookies is another quick and easy to make last-minute-snack. It comes together in 15 minutes or even lesser time.
And as for the mom in you, you’re happy to feed your kids something healthy – nothing can beat peanut butter and cornflakes in a snack, right!?
Peanut butter used here does not just add flavors. It gives these cookies it’s taste and texture. Be sure to use the best quality creamy peanut butter. Crunchy peanut butter does not do great here.
You’ll need the ones that are sweetened and creamy in texture. Leave out those healthy versions of peanut butter. We want old-fashioned creamy sweet peanut butter for these cookies.
What’s Needed for Cornflake Cookies with Peanut Butter
This recipe is made with just 6 ingredients –
- Cornflakes
- Light corn syrup
- Granulated sugar (note you’ll see powdered sugar in the pic, don’t use powdered sugar. I experimented with both and I highly recommend you use granulated sugar)
- Peanut butter – use creamy sweetened old fashioned peanut butter
- Vanilla extract
- Fine sea salt
How To Make Cornflake Cookies
The recipe comes together in no time. And you need to work fast. Especially while working with sugar and corn syrup. Boil it without burning. To help you work fast, measure all ingredients and keep it ready near the counter.
Step 1 : Prep Work – Measure all the ingredients and keep it on counter near the stove ready. Keep mixing bowls, whisks, ice cream scoop, and a tray lined with parchment paper ready near you before you begin.
If peanut butter is hard, microwave the measured content for few seconds to loosen it.
Step 2 : Melting Sugar – Add light corn syrup ,granulated sugar and peanut butter into a small sauce pan. Keep whisking and cook on medium low heat. You want to dissolve sugar without burning. When the mix just reaches the boiling point remove it from heat.
Note – You can add peanut butter along with corn syrup and sugar and bring to boil, or add it after all sugar is melted and pan removed from heat.
Step 3 : Flavoring – Once sugar mix begins to boil, remove the pan from stove immediately. Add in pure vanilla extract and a pinch of fine sea salt. Whisk well to combine all ingredients.
Step 4 : Add Cornflakes – Immediately add cornflakes into the sauce pan and fold the mix to coat peanut butter sugar mix evenly all over the cornflakes. Work faster but with care. Try not to break cornflakes too much.
You need to do all this while sugar mix is still hot. Else peanut butter sugar mix will begin to harden and it won’t be easy to fold in corn flakes into the mix.
Step 5 : Scoop & Set – Using a ice cream scoop, scoop equal portions of cornflakes cookie mix and place it on a tray lined with parchment paper. You can flatten the scooped mix slightly. Repeat this until all the cookie mix is scooped and set on the tray.
Step 6 : Wait Until Sets – the hardest part is the waiting time to allow the cookies to set. Let it cool for about 30 minutes until the cookies are completely set.
If you are someone like me who can’t hold your excitement to taste, do wait, go ahead and pop the gooey, chewy cookie right away. They are BOMB! Messy, but so good!
Pro-Tip : If you like a little salty hint, feel free to sprinkle a pinch of kosher salt over the cookies before it sets.
How To Store Cornflake Cookies
Place completely set cookies in air tight containers lined with wax paper and store it in room temperature. The wax paper helps the cookies not stick to one another and to the containers. You don’t need to refrigerate these cookies. It can be kept at room temperature for 3 weeks.
Note – I guess the storing time can be more than 3 weeks. I was able to test it for 3 weeks in air tight containers at room temperature.
