Here’s what you’ll need –
Ingredients notes
- Tortillas – use any tortilla of your choice. Plain flour tortillas, corn tortillas, or spinach tortillas all of them work.
- Chicken – I used chicken breasts. Feel free to use boneless chicken thigh too.
- Cream cheese – use softened cream cheese. The best way to soften cream cheese is to leave it on the counter for a couple of hours before you make pinwheels. If you forgot to remove cream cheese from the refrigerator to soften, transfer the slab of cream cheese into a microwavable safe bowl and microwave it on high power for 15(to 20) seconds. Feel free to use a low-fat version of cream cheese for a lighter version snack.
- Sharp cheddar cheese – I highly recommend you use sharp cheddar cheese. It not only imparts flavor to the dish, the bright orange color of the cheddar gives the tortilla pinwheels a colorful look.
- Parmesan – freshly grated Parmesan cheese adds umami flavor and taste to the pinwheels.
- Green onions – to add extra crunch and freshness.
- Celery – adds flavor, and texture to every bite.
- Bacon – Bacon makes everything taste amazing. I highly recommend you don’t skip bacon. Bacon also adds saltiness and a rich taste.
- Enchilada sauce – I used just a bit, but feel free to use more if you love the flavor. Enchilada sauce adds a flavor along with mild heat.
- Salt & pepper – add to taste.
Ingredients additions and substitution
- Vegetables – you may add lettuce, diced red bell peppers, zucchini, cucumber, or a can of diced tomatoes (drained well), diced jalapenos or pickled jalapenos, and little pickled red onions.
- Meat – feel free to swap shredded chicken with your favorite meat. Turkey, crab meat, ham, or premium pork sausage browned well with a little olive oil in a cast iron pan works best.
- Spices – along with smoked paprika, you can use cayenne pepper, cajun seasoning, or a mix of sweet and smoked paprika.
Step-by-step instructions
Step 1: Season chicken breasts with salt, pepper, and smoked paprika. Rub to spread evenly, season on both sides.
Step 2: Cook seasoned chicken breasts in olive oil for a few minutes until browned and cooked.
Step 3: Flip and cook on the other side until browned and cooked through. Do not overcook the chicken.
Step 4: Transfer seared and cooked chicken to a bow. Let it rest for a few minutes.
Step 5: Shred browned chicken fine.
Step 6: All the filling ingredients to shredded chicken – softened cream cheese, grated sharp cheddar, freshly grated Parmesan, green onion, celery, enchilada sauce, salt, pepper, and crispy bacon bits.
Step 7: Mix well to combine.
Step 8: Warm the tortilla on a skillet for 5 seconds on each side. Spread a thin layer of the filling over lightly warm tortillas, leaving the edges.
Tip: Do not use too much filling, it may turn the tortilla roll-ups soggy. Sprinkle extra sharp cheddar cheese and a few crispy bacon bits on top.
Step 9: Roll the tortilla very tight, ensure not to tear the tortillas, and keep the filling inside.
Step 10: Repeat the steps with the rest of the tortilla and wrap it tight into rolls.
Step 11: Wrap the wraps in plastic wrap and refrigerate them until use. To prevent tortilla crack, it’s better to allow the pinwheels wrapped in plastic wrap to rest in the refrigerator for a minimum of 30 minutes before slicing. If you plan to make it ahead, leave the roll-up in the refrigerator overnight. Next day when it’s party serving time slice it into pinwheels and serve with a spicy dipping sauce such as marinara sauce.

The wraps can be stored in the refrigerator upto 24 hours. Slice right before servings. Leftover chicken tortilla roll-ups can be stored in an airtight container in the fridge. Do consume it within a day, when stored longer the pinwheels turn soggy.
