Ingredients you’ll need
Two main ingredients for this skillet potato recipe is potatoes and sausages. You can add on more ingredients like aromats like onion garlic and herbs, veggies like bell peppers, carrots and seasoning as per your choice.
Here’s what you need-
- 1 ½ pounds red skin baby potatoes
- 1 pound smoked breakfast sausage
- 5 tablespoons olive oil you can use olive oil and butter
- 2 teaspoon garlic minced
- 1 large onion sliced
- ½ red bell pepper cut lengthwise
- ½ yellow bell pepper cut lengthwise
- 1 ½ teaspoon red chili flakes
- Salt and pepper to taste
- ¼ cup chicken stock
Potato: use any type of potatoes – baby potatoes, fingerlings, red potatoes, yukon gold.
Vegetables: colored bell peppers for extra nutrition and crunch.
Aromatics (onion & garlic): for flavor and taste. Red chili flakes are optional but highly recommended. It adds heat to the potatoes without overpowering them.
Seasoning: salt and pepper seasoned to taste.
How to make sausage potato skillet
You can use any potatoes you like, I used red-skinned potatoes. I cut into thin wedges. You can slice them round too.
BEFORE YOU START: While making roast potatoes I usually parboil potatoes either in a large pan immersed in water or microwave at high power 1200w for 8 minutes until it’s fork-tender.
In today’s recipe I used raw potatoes and cooked it directly on skillet by covering it with lid and cooking for 10 to 12 minutes stirring regularly. You can par boil potatoes first and then brown it in cast iron skillet. If using par boiled potatoes, time to brown potatoes will reduce.
- Cook potatoes in a hot cast iron pan over medium to medium-high heat. Do not overcrowd the skillet. And do not turn potatoes for a few minutes first. This will ensure you get evenly cooked and charred on one side potatoes.
- Season potatoes with salt and pepper while cooking. Cover potatoes with lid and cook for 10-12 minutes stirring regularly. Once potatoes are evenly cooked remove them from skillet.
- Add sausages to the skillet and cook for 2 to 3 minutes. That’s how long it took me to cook smoked chicken sausage. Note: if using breakfast sausages or Italian sausages or chorizo (any of the raw sausages) you will have to increase the cooking time to ensure raw meat is cooked.
- Now add sliced onions, minced garlic, red and yellow bell peppers cut length-wise to the sausages. Cook for a few minutes.
- Season with salt, pepper, and red chili flakes. Bring it all together with ¼ cup chicken stock.
- Wait until everything is cooked through and stock is evaporated completely.
- Add back the cooked potatoes to the skillet and wait for 5 minutes.
- Remove from heat, season with parsley, and serve.
Useful tips for best skillet potatoes
- You can use any type of potatoes. Highly recommend you use baby yukon gold or baby red potatoes.
- Cut potatoes evenly to ensure everything is cooked well and evenly.
- Use a cast iron pan to get perfect skillet potatoes. Potatoes and sausages slightly charred to dark brown add wonderful smoky flavor and tastes great. You can’t get those flavors in other types of skillet.
- Use olive oil and butter for richness and taste.
- Wait for the cast iron pan to turn HOT before you throw in potatoes.
- DO NOT OVER CROWD THE PAN.
- Wait for 5 to 8 minutes before you turn the potatoes. This step ensures you get nice char on potatoes. If you pile the potatoes in the skillet, potatoes won’t brown well.
- Also do not cover the potatoes. Covering the skillet with a lid will turn potatoes mushy!
- Season potatoes with salt and pepper. Mix well, and keep stirring at regular times. Cook until potatoes are cooked through. This can take about 10-12 minutes depending on your stove and the size of the potatoes.

Yes you can. Baby potatoes, fingerlings, red potatoes, yukon gold all are great options. Highly recommend baby yukon gold or baby red potatoes for making sausage potato skillet recipe.
Highly recommend you use smoked sausage. Having said that you can use breakfast sausage, chorizo, Italian sausage as well. If using these sausages, you’ll need additional cooking time before you can add it to skillet.

- Chop potatoes evenly. Either lengthwise into thin wedges or sliced round. Slice sausages lengthwise into half.Slice onions thin and red bell peppers lengthwise.
- Heat up cast iron pan. When cast iron skillet turn hot, add olive oil.
- Add sliced potatoes to hot cast iron pan and wait for 5 to 8 minutes before you turn potatoes.
- Season potato with salt and pepper to taste. Stirring occasionally cook potatoes until cooked through.
- Remove potatoes onto a plate.
- Add sausages to the same skillet and cook for 2 to 3 minutes.
- Add minced garlic, sliced onions, bell peppers to the pan. Saute and cook for few minutes.
- Add salt and pepper to taste.
- Add red chili flakes.
- Cook for 2-3 minutes.
- Add chicken stock and continue to cook.
- Add back cooked potatoes(add few tablespoons of more chicken stock if needed to cook potatoes through). Let everything cook and come together for 5-8 minutes.
- Turn off flames. Garnish with parsley.
- Serve!
