- Extra virgin olive oil – Use good quality EVOO. It gives a rich flavour to the dip.
- Garlic – Garlic is mandatory! Use fresh garlic or roasted garlic. Roasted garlic adds wonderful, strong flavours to the dip!
- Spices – Ground cumin & Ground Coriander – warm spices that add wonderful depth of flavour to white bean hummus. A bit of heat and nutty flavor.
- Lemon juice – use freshly squeezed lemon juice rather than store-bought jar.
- Red chili flakes – for a hint of heat. I used it only for garnish; you can blend some into the hummus.

Drain a can of white beans in a colander. Rinse it in water.

Step 1: Add all the ingredients – cannellini beans, 2-3 tablespoons of liquid from the can, tahini, extra virgin olive oil, garlic cloves, ground cumin, ground coriander, a hint of red chilli flakes (optional), salt, lemon juice, and an ice cube into a blender and blend.
Step 2: Blend until smooth and creamy, scraping down the sides of the blender with a spatula.
Taste and add seasoning accordingly.
If the dip is too thick and lumpy, add 1 or 2 more ice cubes or a teaspoon of chilled water while blending.
Transfer to a serving bowl and garnish with extra virgin olive oil, red chilli flakes, and fresh thyme. Serve alongside garlic bread toast, vegetable sticks, and crackers.
