Ingredients

Sour Cream – full-fat sour cream gives the best mouthfeel. Adds creamy, tanginess to the cold dip.
Canned Tomatoes – I used a can of Rotel diced tomatoes with green chillies. You can also use a can of regular diced tomatoes. Drain well before use. Canned tomatoes add acidity and freshness.
Cheddar Cheese – I used a sharp cheddar. You can also use Mexican blend, pepper jack, or Colby jack. Always buy a block of cheese and grate it yourself for the best results.
Jalapenos – If you love an extra kick, add diced jalapenos (seeds removed). This is completely optional. For mild heat, you can use homemade pickled jalapenos.
Ranch Seasoning – Adds notes of tangy, herby, savoury flavours. You can use homemade seasoning or store-bought packets.
Taco Seasoning – Adds spicy savoury note. You can use homemade seasoning or store-bought packets.
Green Onion – mix some of it in the dip, or use it to sprinkle on top before serving
Additions and Substitutions
- If you can’t get sour cream, you can use plain Greek yogurt.
- Substitute a can of Rotel tomatoes with a can of regular tomatoes.
- You can mix roasted corn into the dip.
- Feel free to mix in crispy bacon bits into the dip for extra yumminess.
Step-by-Step Instructions

Step 1: Add all the ingredients (except green onion) to the bowl.
Step 2: Mix until well combined.
Chill for a minimum of half an hour to a couple of hours in the refrigerator.
Sprinkle green onion and a little cheddar cheese on top.

- Freshly grated cheese. Always shred cheese from a block. Pre-grated cheese has fillers and preservatives that prevent it from melting well.
