Easy Creamy Cheesy Viral Boat Dip Recipe

This no-cook, easy-to-make, creamy and cheesy boat dip is made with sour cream, shredded cheddar cheese, taco seasoning, ranch seasoning, Rotel tomatoes, jalapenos, and green onion. It’s an ultimate Tex-Mex style cold dip that’s perfect for a make-ahead, shareable, cold snack that you can bring to a pool or beach party!

Why This Dip Will Be Your New Summer Favourite?

Ingredients

Sour Cream – full-fat sour cream gives the best mouthfeel. Adds creamy, tanginess to the cold dip.

Canned Tomatoes – I used a can of Rotel diced tomatoes with green chillies. You can also use a can of regular diced tomatoes. Drain well before use. Canned tomatoes add acidity and freshness.

Cheddar Cheese – I used a sharp cheddar. You can also use Mexican blend, pepper jack, or Colby jack. Always buy a block of cheese and grate it yourself for the best results.

Jalapenos – If you love an extra kick, add diced jalapenos (seeds removed). This is completely optional. For mild heat, you can use homemade pickled jalapenos.

Ranch Seasoning – Adds notes of tangy, herby, savoury flavours. You can use homemade seasoning or store-bought packets.

Taco Seasoning – Adds spicy savoury note. You can use homemade seasoning or store-bought packets.

Green Onion – mix some of it in the dip, or use it to sprinkle on top before serving

Additions and Substitutions

  • If you can’t get sour cream, you can use plain Greek yogurt.
  • Substitute a can of Rotel tomatoes with a can of regular tomatoes.
  • You can mix roasted corn into the dip.
  • Feel free to mix in crispy bacon bits into the dip for extra yumminess.

Step-by-Step Instructions

Step 1: Add all the ingredients (except green onion) to the bowl.

Step 2: Mix until well combined.

Chill for a minimum of half an hour to a couple of hours in the refrigerator.

Sprinkle green onion and a little cheddar cheese on top.

Serve it cold with nachos, chips or Fritos.

Tips For Success

  1. Chill before serving. Refrigerate it for 1 or 2 hours before serving, so all the flavours develop.
  2. Drain Rotel tomatoes. Drain well before mixing them in. You don’t want the dip to turn watery.
  3. Heat. Adjust the heat levels based on your heat tolerance levels. Use mild Rotel tomatoes or Hot Rotel tomatoes according to your preference, and skip jalapenos if you want mild heat.
  4. Add crunch. For extra crunch, add roasted sweet corn, black beans or crispy bacon bits.
  5. Freshly grated cheese. Always shred cheese from a block. Pre-grated cheese has fillers and preservatives that prevent it from melting well.

Storing

Refrigerator any leftover dip in an air-tight container for up to 5 days.

Can you make the boat dip ahead of time?

Yes. It’s a great make-ahead dip. Store the dip in an airtight container in the refrigerator for up to 5 days.

What makes Rotel ranch dip turn watery?

Excess tomato juice is one of the most common reasons the boat dip turns watery. Make sure to drain the can of Rotel tomatoes well. Empty the can into a fine-mesh sieve set over a bowl to catch the liquid.
Let the tomatoes drain for a couple of minutes, then gently press them with the back of a spoon. When the juices stop dripping, mix it with the ingredients of the boat dip.

What to serve with boat dip?

Serve it cold with nachos, chips or Fritos.
