These spicy buffalo chicken sliders are reminiscent of buffalo chicken dip. An easy, pull-apart showstopper dish featuring fluffy slider buns smothered in cheesy dip, filled with juicy, spicy buffalo chicken, and topped with loads of cheese, baked to cheesy perfection.

Ingredients

- Dinner rolls – if you have access to King’s Hawaiian rolls, best to use them. I used regular 12-count dinner rolls.
- Chicken – I used rotisserie chicken, shredded. Any leftover cooked chicken will work. Best to use chicken that isn’t heavily seasoned, so the flavours don’t clash with the buffalo hot sauce.
- Buffalo hot sauce – Frank’s Buffalo hot sauce is the best choice; it adds fiery, zesty heat to the pasta dish.
- Ranch seasoning – adds creaminess to shredded chicken and helps mellow down the heat of the buffalo hot sauce. Use homemade buttermilk ranch dressing or store-bought. You may also use homemade blue cheese dressing.
- Honey – adds a hint of sweetness, which is so important when you have a strong seasoning like hot sauce.
- Garlic – you can use canned minced garlic or fresh garlic, minced. It adds to the flavor.
- Cheese dip/spread (optional) – smother the bun with mildly spicy cheesy dip to add a layer of flavour to the bun. I used spicy nacho cheese dip.
- Cheddar cheese slices – for cheesy flavours. I used herby flavored cheddar cheese slices.
- Pickled Jalapenos – I added some pickled jalapenos on top for extra flavor and bite. You can also use cowboy candies or spicy-sweet pickled jalapenos.
- Mozzarella + Cheddar cheese – be sure to use freshly grated cheese, as they melt better. Pre-grated cheese has added fillers and doesn’t melt well.
- Butter – to brush over the roll and roast. Use unsalted butter.
- Green onion – sprinkle some over buffalo shredded chicken, plus mix it with melted butter, which adds more flavors.
- Cilantro – sprinkle some over buffalo shredded chicken, plus mix it with melted butter, which adds more flavors.
- Poppy seeds (optional) – sprinkle some over the dinner rolls.
Step-By-Step Instructions
Preheat the oven to 350°F.

Step 1: In a bowl, add shredded cooked chicken (you can use rotisserie chicken), buffalo hot sauce, ranch seasoning, honey, minced garlic, salt, and pepper.
Step 2: Mix well and set aside.

Step 3: Using a serrated knife, slice the dinner roll in half; don’t pull apart the rolls. Keep them intact.
Step 4: Lightly brush melted butter over the lower half of the dinner roll. Spread the cheesy dip; I used spicy nachos cheese dip.
Step 5: Place cheddar cheese slices.
Step 6: Top it with juicy buffalo chicken generously over the top.

Step 7: Sprinkle green onion and cilantro over the chicken.
Step 8: Arrange a few pickled jalapenos; you may also use candied jalapenos. This is an optional step. Generously cover the top with a mix of freshly shredded cheddar and mozzarella cheese.
Step 9: Cover it with the top half of the dinner roll.
Step 10: To the melted butter, mix chopped cilantro and Italian seasoning.
Mix well and brush it generously over the dinner rolls.
Finally, sprinkle a little poppy seed over the rolls.
Bake in a pre-heated oven at 350°F for 10-12 minutes.
Serve them hot.
Serving Suggestions
These spicy, cheesy buffalo chicken sliders pair well with Asian coleslaw or cranberry almonds apple slaw. The cool dressing of the coleslaw, along with its crunchy texture, helps mellow the heat of the sliders.
