A super easy soup that not just tasty but also loaded with all healthy nutrients will easily become your summer favorite cold soup that can be served as starter or as light meal.
You might have used strawberries in sweet desserts so far. How about using it to make a savory drink, a cold summer soup? The savory and sweet combination in this raw soup served cold is very refreshing on hot summer days.
My kids aren’t soup fan at all. No matter what, they refuse to drink any kind of soup on any day. But strawberries being their favorite, they did not refuse to try strawberry gazpacho soup.
A few sips and there weren’t complaining. Drank the whole glass of soup (yes, my kids like to sip on cold strawberry soup in glasses rather than bowl and soup)
I also freaked out on this delicious soup. Yea it was delicious. Hot weather outside and cold soup loaded with strawberries, cucumbers and everything..it’s good! Summer calls for this perfect soup. It has wonderful bite in it.
This blender soup need very less time and no cooking involved. When temperature soars high, a no cook recipe is always welcome. The texture of gazpacho can be anything from coarse soup mix to smooth consistency soup. Up to you to decide how you want your gazpacho consistency to be.
Strawberry Gazpacho Ingredients

Fresh simple summer ingredients in what you’ll need to make this raw soup.
- Strawberries
- Tomato
- Red bell peppers
- Cucumbers
- Garlic
- Balsamic vinegar
- Salt and pepper to taste
- Olive oil
- Vegetable stock
- And fresh herbs like – thyme or basil or fresh mint.
How To Make Strawberry Gazpacho
- Hull the strawberries and chop them into pieces. Peel cucumber and chop it. Chop rest of the vegetables roughly.
- Combine strawberries, tomato, cucumber, red bell peppers, garlic, thyme and salt and pepper to taste. Pulse until all ingredients are finely chopped.
- Then slowly pour in balsamic vinegar, olive oil, and vegetable stock (don’t add stock if you are after thick gazpacho soup) and continue to blend until gazpacho reaches the desired consistency.
- Pour the puree into a container and chill it for at-least 30 minutes to overnight.
- Serve chilled gazpacho in individual bowls with few chopped strawberries and thyme leaves.

- 1 tomato (medium size)
- ½ red bell peppers
- 1 English cucumber
- 2 garlic cloves
- 1 teaspoon thyme
- 1 tablespoon balsamic vinegar
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
- ¼ cup vegetable stock
For Garnish
- Few chopped strawberries
- Few thyme leaves
