  7. Easy to customize use any buttery crackers, any kind of nut butter to make these peanut butter cookies.

Chocolate peanut butter Ritz cookies ingredients

  • 48 Ritz crackers
  • 2 ½ cup semi-sweet chocolate
  • 1 cup creamy peanut butter, sweetened
  • Sprinkles (optional)

Ingredients substitutions & additions

Ritz crackers: you’ll need Ritz crackers.

If you want to substitute use any buttery crackers (saltine crackers) instead.

Semi-sweet chocolate: use best quality chocolate for the recipe. Block chocolate or chocolate chips can be use. Select premium chocolate that melts well. Use ¼ teaspoon coconut oil while melting chocolate to get glossy melted chocolate.

If you prefer to make it with different types of chocolate use dark chocolate, milk chocolate or white chocolate as alternative.

Peanut butter: this recipe is best made with creamy sweetened peanut butter.

If you like to use other nut butter, feel free to substitute peanut butter with almond butter, cashew butter or sunflower seed butter.

Sprinkles: because sprinkles make every treat super fun. Use any kind of sprinkles.

If you don’t want to use sprinkles, you can use coarse sea salt flakes. Sprinkle coarse sea salt flakes on top before chocolate sets.

How to make chocolate peanut butter Ritz cookies

Line a large baking sheet with parchment paper or silicon mat.

Microwave chopped chocolate block or chocolate chips in a bowl for 10-15 seconds burst stirring at each burst. Do not overheat chocolate.

TIP: add ¼ teaspoon coconut oil to chocolate before melting. Coconut oil will help melt chocolate into smooth silky chocolate.

Place 24 crackers on the baking sheet leaving little space between each other.

Spoon in about ½ to 1 tablespoon creamy peanut butter on top of each cracker.

Gently press another cracker on top of to make cracker sandwich.

Repeat with remaining crackers.

PRO-TIP: you can refrigerate cracker sandwich for 20-30 minutes to firm up the peanut butter. It will be easy to work with chocolate coating.

Drop a cracker sandwich in melted chocolate. Using two forks, gently move the cracker around to get uniform coating of chocolate.

Shake off excess chocolate coating from the cracker sandwich.

Place chocolate coated crackers on baking sheet.

Repeat with remaining cracker sandwich.

If using sprinkles, add sprinkles on top before chocolate sets. You can add coarse sea salt instead of sprinkles.

Let Ritz cookies sit until chocolate hardens and set.

Store in air tight container.

Expert tips to make best Ritz cookies

  2. Use premium quality chocolate either blocks or chips. You want the chocolate to melt well.
  3. Add ¼ teaspoon coconut oil to chocolate before melting. Coconut oil will help melt chocolate into smooth silky chocolate.
  4. Don’t spread peanut butter to the edges or else it will spill out.
  5. Gently press another cracker to form sandwich with evenly distributed peanut butter center.
  6. You can refrigerate cracker sandwich for 20-30 minutes to firm up the peanut butter before dipping in melted chocolate. Makes it easier to work.
  7. Use two forks to flip cracker sandwich in melted chocolate. It’s easy to tap off excess chocolate coating with fork.

Tips for melting chocolate

You will need silky smooth melted chocolate for coating. If the chocolate does not melt well then you will not get smooth velvety finish on the cookies.

Select premium quality chocolate that is meant for melting for this recipe. Highly recommend adding ¼ teaspoon coconut oil to chocolate before melting to get silky smooth melted chocolate.

Also, do NOT over heat chocolate while melting. If melting in microwave do it in 20 seconds burst and give it a good stir during every burst. Once 80-90% of the chocolate is melted, stop heating it further. With a good stir and residue heat from the bowl the leftover bits of chocolate will melt.

How to store Ritz cookies

IN THE FRIDGE: Once chocolate is fully set, transfer Ritz cookies to air tight containers and store in refrigerator for up to 2 weeks.

IN THE FREEZE: Once chocolate is fully set, transfer to zip lock bags or air tight containers. Pop in freezer. You can keep these cookies frozen for up to 3 months.

Ritz cracker cookies variations

The classic Ritz cookies is great. You can add your own twist to mix things up. Here are some of the ideas –

Use other nut butter, feel free to substitute peanut butter with almond butter, cashew butter or sunflower seed butter.

Place mini marshmallow on top of peanut butter.

Drizzle some caramel sauce on top of chocolate coated cracker cookies for extra indulgence.

Sprinkle coarse sea salt on top before chocolate melts for salty sweet indulgence.

For tasty alternative use dark chocolate, milk chocolate or white chocolate.
