I know that many times with my recipes I tell you that this recipe is the best. Because it’s truly is and so I don’t think it’s wrong to mention it.
Skewers are fun food that’s great for entertainment and for BBQ picnic. Pineapple cubes studded between the marinated shrimp – FRESH and LIGHT!!
Imagine Friday evening with your BBQ/grills fired up, chilled beer in hand, grilling these ridiculously easy grilled skewers. Yep, that’s what we have going on here.
Remember that insanely delicious grilled pineapple I posted a few days back. It was truly life’s greatest pleasure. And you guys did agree on that will all your  love you showed to the post! That post made me think of more ways to grill pineapple and introduce more flavors to it.
And this time I wanted a savory dish with grilled pineapple. Grilled pineapple works so well with grilled chicken(pork too) and seafoods – fish, shrimp. Pineapple takes in all the amazing flavors you rub on it and with shrimp – we are talking 20 minutes or less on the clock finger food or your side dish for main course.
The arrival of summer epitomes the arrival of grilling season. It’s time to enjoy being outside basking in the glory of sun. We definitely do not love heating up the kitchen more with the stoves and burners.
Outdoor grill time it is. And keeping the theme for quick and easy meal shrimp works the best. I love that shrimps takes so little time to cook but can take in plenty of flavors.
Pineapples, teriyaki sauce and shrimp – it’s all perfect match! Basting teriyaki sauce before grilling and while grilling serves double purpose – as a marinade to enhance flavor and makes it saucy so you can serve with rice.
How To Skewer Shrimp and Pineapple?
You need to have pineapple cubes/chunks that makes threading easy. Cleaned and de-veined shrimp that is marinated in amazing flavor packed marinade and pineapple cubes are alternatively threaded into the skewer rods and grilled.
And don’t forget to slather some more of the deliciousness of Hawaiian teriyaki sauce over the shrimps and pineapple soon as they come out of the grill. These are SOOOO GOOD!
How Long Does It Take To Cook Teriyaki Pineapple Shrimp Skewers
Heat up the grill. Grill the shrimp over direct, medium heat for 5-7 minutes, turning the shrimp halfway through the process.
I do not have an outdoor grill yet, so the grilling happened on a grilling pan on stove top. Time to grill on stove top is the same.
What Type Of Skewers Works Best?
Literally any skewers works for grilling. Metal rod skewers, bamboo skewers, or even herbs stalk  like rosemary works(you need to have a strong thick stick of rosemary to be able to thread in the fruit and shrimp). If using bamboo skewers make sure to soak them in water for 15-20 minutes to avoid burning while grilling.
Amazing Sweet-Spicy Marinade For Grilled Shrimp Skewers
To create an amazing flavor profile and to balance out the sweetness of pineapple we created a spicy marinade for shrimps.
- 1.5 teaspoon of smoked paprika
- 1.5 teaspoon of cayenne
- ½ teaspoon of cumin powder(optional, skip if you don’t like cumin flavor)
- Teriyaki sauce
- Salt and Pepper to taste
- Olive oil
- Brown sugar
- And lime juice.

Teriyaki Grilled Pineapple Shrimp Skewers
Ingredients
- 1 pound large shrimp peeled and deveined
- 1 pineapple peeled and sliced into ½ inch by 2 inch pieces
- ½ cup teriyaki sauce
For the marinade
- 1.5 teaspoon of smoked paprika
- 1.5 teaspoon of cayenne
- 1 teaspoon of cumin powder (optional , please skip if you don't like cumin flavors)
- Salt and Pepper to taste
- 3 tablespoon olive oil
- 1 tablespoon brown sugar
- Juice of 1 lime
For garnish
- Fresh coriander leaves
- Lemon wedges
Instructions
- Marinate the shrimp in the marinade for 10-15 minutes. While shrimp marinates, peel and cut pineapple into cubes.
- Soak bamboo skewer sticks in water for about 30 minutes to avoid burning. If using metal skewers, ignore this step. While the shrimp is marinating fire up your grill.
- Thread in pineapple cubes, marinated shrimps alternatively. Grill the shrimp over direct, medium heat for 5-7 minutes, turning the shrimp halfway through the process.
- Don’t forget to slather some of the deliciousness of Hawaiian teriyaki sauce over the shrimps and pineapple soon as they come out of the grill.
- Serve immediately. Love eating it directly as finger food, but it also great on tacos, sandwiches, meal prep box alongside rice, in salads almost in everything.
