Skewers are fun food, it’s great for BBQ entertainment and picnics. Up your grilling game this summer with this flavor packet shrimp skewer recipe with pineapple. It’s like a tropical holiday on your plate. With fresh pineapple chunks and shrimp marinated in an Asian sauce. The marinade has a balance of sweet, tangy, and spicy flavors.
These are perfectly served with steamed rice, jasmine rice, or couscous. It takes less than 10 minutes from the grill to the plate.
And what makes this grilled shrimp skewer recipe so amazing? It’s the marinade! It’s easy to make and packed full of flavors.
Grilled pineapple is one of the simple but greatest pleasures in life. Pineapple adds a wonderful sweetness to a savory dish as well. It can be used with grilled chicken, pork, fish, and shrimp.
Step-by-step instructions
The recipe starts with pineapple cubes/chunks and fresh cleaned and de-veined shrimp.
Step 1: Clean and devein shrimp, if you like leave the tail on. Add olive oil, smoked paprika, cayenne pepper, ground cumin (optional), salt and pepper, brown sugar, and juice of 1 lime.
Step 2: Toss shrimp well in the spice rub, and let it marinate for 10-15 minutes.
Step 3: If using bamboo skewers soak in water for 15 minutes, to prevent the skewers from burning.
Step 4: Drain skewers from water. Thread a cube of pineapple and marinated shrimp alternatively on the skewer.
Step 5: Repeat with remaining shrimp and pineapple cubes.
Step 6: Generously slather pineapple and shrimp with Hawaiian teriyaki sauce, and allow them to marinate for a couple of minutes.
Step 7: Grill the shrimp over direct, medium heat for 5-7 minutes, turning the shrimp halfway through the process. Grill on direct fire on BBQ, I used a grilling pan on the stovetop.
Step 8: Don’t forget to slather the Hawaiian teriyaki sauce over the shrimp and pineapple during the grill and as soon as they come out of the grill. Flip and grill on the other side for 1-2 minutes or until shrimp is cooked through and pineapple cubes have beautiful char on them.
Serve immediately with rice, couscous, or shrimp with lettuce wraps.
Best tips
- Fresh shrimp are best. If you want to use frozen shrimp, thaw completely and drain excess water, pat dry completely.
- Leave the tail on: Use jumbo shrimps. It’s your choice, of course, to leave the tail on or remove it. I find it easy to handle and looks pretty with a tail. If you can’t get hold of jumbo shrimps, small shrimps can be used. Skewering small shrimps might be challenging, use two skewers to skewer small shrimps so they hold their place. Grill carefully so shrimps don’t fall through the grill holes.
- Ground cumin is optional. I love cumin, adds earthy warm flavors.
- For the best taste, serve shrimp skewers immediately as soon as it’s grilled.

I do not have an outdoor grill yet, so the grilling happened on a grilling pan on the stovetop. The time to grill on the stovetop is the same.
Use metal rod skewers, bamboo skewers, or thick stalks of rosemary works. If using bamboo skewers make sure to soak them in water for 15-20 minutes to avoid burning while grilling.

📋Teriyaki Pineapple Grilled Shrimp Skewers
Ingredients
- 1 pound large shrimp (peeled and deveined)
- 1 pineapple (peeled and sliced into cubes)
- ½ cup teriyaki sauce (feel free to use more sauce if needed)
For the marinade
- 1 teaspoon of smoked paprika
- 1 teaspoon of cayenne
- ¼ teaspoon of cumin powder (optional , please skip if you don't like cumin flavors)
- Salt and Pepper to taste
- 3 tablespoons olive oil
- 1 tablespoon brown sugar
- Juice of 1 lime
For garnish
- Fresh coriander leaves
- Lemon wedges
Instructions
- To shrimp add smoked paprika, cayenne, ground cumin(optional), olive oil, brown sugar, juice of 1 lime, and salt and pepper to taste. Let it marinate for 10-15 minutes. While shrimp marinate, cut pineapple into cubes, you can use how to cut a pineapple post for reference.
- Soak bamboo skewer sticks in water for about 15-20 minutes to avoid burning. If using metal skewers, ignore this step. Fire up the grill.
- Thread in pineapple cubes, and marinated shrimp alternatively. Generously rub teriyaki sauce over it. Grill the shrimp on medium heat for 5-7 minutes, turning the shrimp halfway through the process.
- Don’t forget to slather some of the deliciousness of Hawaiian teriyaki sauce over the shrimp and pineapple in between grilling and as soon as they come out of the grill.
- Serve immediately. Perfect with rice or couscous. It's also great on tacos, sandwiches, for meal prep with rice, in salads almost everything.
