Ingredients you’ll need
For glaze-

- Self-rising flour is preferred. If you don’t have self-rising flour make your own with this ratio- 1 cup all-purpose flour, 1 ½ teaspoon baking powder (be sure to use baking powder and not baking soda), ¼ teaspoon salt.
- Milk – Start with the mentioned amount of milk, but remember you may need to add extra milk as needed. If the dough is too crumbly add milk (½ to 1 teaspoon milk) to form a soft dough, if the dough turns out too sticky and wet add 1 to 2 teaspoons extra self-rising flour to adjust the consistency of the dough. Your dough should be soft.
- Cornstarch helps in binding. Since cornstarch is gluten-free it tends to soften the texture. Don’t skip cornstarch.
- Butter for making the dough and for the butter-sugar-cinnamon filling in the center. Use unsalted butter.
- Sugar – be sure to use dark brown sugar for the best flavor and taste. I do not recommend white sugar. If you can get brown sugar, substitute with light brown sugar or coconut sugar.
- Cinnamon powder is used for the filling. Feel free to adjust the amount of cinnamon powder as per your taste. If you don’t like the cinnamon taste, reduce the amount.
What to expect
Please read this section before you start cooking. This recipe is short cut version of the famous Cinnabon and it’s baked in the microwave. Don’t expect the results to be same as regular cinnamon rolls.
Cinnamon rolls are moist, ultra-soft, pillowy, and sweet with delicious butter cinnamon filling, and topped with generous cream cheese frosting. You can’t expect a roll cooked in 5 minutes to have the same results.
Do not expect the roll to caramelize when you cook/’bake’ in the microwave. The role will be blond. If you try to increase cooking time in the microwave hoping it may caramelize you are over-cooking the roll and it will turn hard.
These microwave cinnamon rolls will be soft, doughy, sweet, sticky, and cinnamon for sure. Glaze soon as it comes out off oven and eat immediately. Leaving it to rest after it’s cooked will result in roll turning hard.
Do not change the recipe, do not add anything extra like chocolate. They can burn.
Step-by-step instructions
Step 1: In a small bowl add self-rising flour, milk, and melted butter.
Step 2: Mix with a wooden spoon until flour is incorporated into the wet ingredients. note: if the dough is too crumbly, add ½ to 1 teaspoon extra milk to the dough for the right consistency.
Step 3: Transfer dough to a counter sprinkled with a little flour.
Step 4: Lightly knead dough until it comes together and is soft.
Cover with cloth and let it rest for 1-2 minutes until you prepare the cinnamon filling.
Step 5: Add melted butter, dark brown sugar, cinnamon powder, cornstarch, and a pinch of salt to a small bowl.
Step 6: Whisk and set aside.
Step 7: Lightly sprinkle flour on a counter. Roll dough into long strips, approximately 4 inches wide and 10-12 inches long (adjust according to your mug size).
Step 8: Spread butter-sugar-cinnamon mix in the center evenly.
Optional step – fold about ¼ inch on both sides to prevent filling from oozing out of the roll while ‘baking’ in the microwave.
Step 9: Roll dough tightly to resemble a cinnamon roll.
Step 10: Grease a standard-sized mug with melted butter. Sprinkle a generous pinch of flour on all sides. Place the cinnamon roll in the mug.
Microwave at high heat for 60 to 90 seconds. The dough should be set and cooked.
Step 11: In a small bowl add confectioners sugar and milk.
Step 12: Whisk until it’s smooth and lump-free.
Step 13: Every microwave behaves differently. If the roll is undercooked, increment cooking time by 5-second intervals. Do not overcook, it’ll turn the roll hard.
Step 14: Pour or drizzle glaze on top of cinnamon roll. Remove the roll from the mug and drizzle a generous amount of glaze. Eat it immediately. Resting the roll will tend to turn hard.
