Magic shell is the perfect topping for ice cream. Chocolate syrup “magically” turns into a shell like a brittle candy when poured over ice cream. One of those childhood pleasures of breaking into those crackly coating of chocolate over your favorite frozen treats!

  4. The nostalgia of pouring chocolate sauce over frozen treats like ice cream, popsicles or frozen fruits just to watch it “magically” turn into a crackly shell is pure bliss!
  5. Homemade magic shell needs only 2 ingredients to make.
  6. It’s easy to make in just 2 simple steps. Mix chocolate chips and coconut oil in a microwave bowl and microwave until melted.
  7. Dip ice cream in a cone into the chocolate syrup to create ‘magic’ chocolate shell over it. You can also dip popsicles into it or spoon it over frozen fruits, banana into it.

What is chocolate magic shell

Magic shell is simply a combination of chocolate chips and coconut oil.

When chocolate ‘syrup’ touches cold ice cream, it hardens immediately and turns into brittle candy topping forming a ‘magic’ shell coating.

It’s incredibly fun and satisfying to tap with a spoon. It cracks with a snap! A spoonful of soft ice cream with candy chocolate-like bits is fun to eat.

How does magic chocolate shell work

The fat content in coconut oil when melted with chocolate chips creates luscious, smooth, pourable chocolate sauce.

When warm chocolate syrup hits frozen ice cream, saturated fat from coconut oil hardens within seconds forming a chocolate candy ‘shell’ coating.

The candy shell coating breaks when you snap with a spoon.

Ingredients you’ll need

You only need 2 ingredients to make magic shell-

1 cup chocolate chips (milk, semi-sweet or dark chocolate will work)

2 tablespoon coconut oil

Chocolate chips-

Use best quality chocolate chips. Better quality chocolate chips has deeper flavors and tastes better. Cheaper ones aren’t great.

Milk chocolate chips, semi-sweet chocolate chips or dark chocolate chips all would work.

Coconut oil-

For neutral flavor use refined coconut oil. Unrefined or virgin coconut oil will has strong after taste.

Additional ingredients

To switch up the flavors use peanut butter chips, butterscotch chips.

Use refined sunflower oil instead of coconut oil if you want completely neutral flavors.

How to make magic shell

  • Making a chocolate magic shell doesn’t get simpler than this.
  • Place chocolate chips and coconut oil in a microwave-safe bowl.
  • Heat on HIGH power in a 20-seconds interval, stirring thoroughly every interval.
  • Microwave until chocolate is completely melted, glossy smooth, and pourable.

  • If you don’t have a microwave you can use a double boiler to melt chocolate chips.
  • Allow to cool for a few minutes then pour into a mason jar.
  • Pour over ice cream or dip a popsicle (or banana) into it.
  • Allow a minute or two for the shell to harden completely.

Useful tips

Bring ingredients to room temperature-

Ingredients should be in room temperature.

If chocolate chips or coconut oil is stored in fridge, bring it to room temperature by placing it on counter for an hour or two.

Moisture (due to refrigeration) in the chocolate chips will harden the chocolate instead of melting into glossy smooth syrup.

Choose right oil-

Use refined coconut oil for neutral flavor. Unrefined or virgin coconut oil will have strong flavors.

Switch flavors –

To switch up the flavors use peanut butter chips, butterscotch chips.

How to store –

Store magic chocolate shell in air tight glass jars like mason jars on the counter at room temperature. You can store it for up to a month at room temperature.

Ways to use magic shell

Spoon the chocolate syrup over ice cream to watch the syrup instantly harden and turn into shell chocolate coating on top of ice cream. Dip ice cream in a cone into the chocolate syrup to create a ‘magic’ chocolate shell over it. You can also dip popsicles into it or spoon it over frozen fruits, or frozen bananas into it.

How to make magic shell if I don’t have microwave?

If you don’t have a microwave you can melt chocolate chips using a double boiler.
To make a double boiler, add 1-inch water to a small saucepan and bring it to a steady boil. Place chocolate chips and coconut oil in a clean dry stainless steel bowl that can sit on top of a small saucepan. Make sure the bottom of the bowl does not touch the water in a saucepan.
Once the water begins to steady boil, place the bowl on top and heat chocolate with constant stirring until chocolate is completely melted, glossy smooth, and pourable.

Can I use chocolate chunks instead of chocolate chips?

Yes, you can. If you do not have chocolate chips simply chop the baking chocolate bar (use dark or semi-sweet) into small chunks and use in the recipe.

Can I make this chocolate magic shell ahead?

Yes you can. It keeps good for up to a month at room temperature.

Can I refrigerate magic chocolate shell?

No. It can be stored in mason jar on the counter at room temperature. If you store in refrigerator it will turn rock hard.
