  10. Customize according to preference. Either dunk the meatballs in hot spicy zesty buffalo sauce or drizzle it over, whatever makes you happy! Either way, these are lip smacking delicious!

Ingredients Needed For Buffalo Chicken Meatballs

Here’s what you’ll need-

  • 1 lb ground chicken
  • ½ cup panko breadcrumbs
  • 1 egg
  • 3 garlic cloves, minced
  • 2 green onion, minced
  • 1 celery, finely chopped
  • 1 carrot, minced
  • ½ teaspoon paprika
  • Salt & pepper to taste
  • Olive oil to spray (about 2 tablespoon)

For Buffalo Hot Sauce-

  • 1 stick butter
  • ¾ cup hot sauce
  • ½ teaspoon garlic powder

Ingredients Additions & Substitutions

Add more herbs to enhance flavors. Dried or fresh parsley, dried dill can be added.

Add 1 to 2 tablespoon of crumbled blue cheese into the meatball mixture. It tastes amazing.

Also for strong flavors, add 1 teaspoon of hot sauce into meatball mixture.

For big punch of blue cheese add blue cheese dressing and crumb together as garnish.

Fresh garlic can be substituted with garlic powder.

If you don’t have green onions substitute it with onion powder. Note – fresh minced green onion (both white and green part) helps in keeping meatballs moist.

How To Make Buffalo Chicken Meatballs?

Buffalo chicken meatballs starts with mixing all ingredients in a bowl. Add all ingredients for meatballs – ground chicken, panko breadcrumbs, lightly beaten egg, minced green onion (white and green part included), minced garlic, finely diced celery, minced carrot, paprika, salt and ground pepper to taste.

Using hand or spatula mix ingredients together. DO NOT OVER MIX. That’s a secret to juicy meatballs. Overmixing will result into drier meatballs.

Using a small scoop or spoon portion meat. Roll meatballs.

Place it on greased baking tray.

Spray olive oil on meatballs before baking and once or twice in between baking time. This will prevent meatballs from turning dry.

Bake in pre heated oven at 400°F for 20 to 25 minutes or until cooked through.

While the meatballs are cooking, we will make buffalo sauce.

Melt a stick of butter in a pan. Add hot sauce and garlic powder.

Whisk together. Remove from heat. Continue to whisk until everything blends together.

When meatballs are done cooking, remove from oven and let it rest for 5 minutes.

You can either dunk meatballs in prepared buffalo hot sauce or drizzle it over the meatballs. Either way these are lip smacking good!

I prefer to drizzle buffalo chicken meatballs with buffalo hot sauce and blue cheese dressing on top.

Garnish with blue cheese crumbs on top and green onions.

Serve immediately.

Do I Need Blue Cheese?

Classic appetizer buffalo chicken wings has hot sauce and blue cheese that gives it it’s unique flavor combination. Blue cheese is mandatory in buffalo chicken recipe. These meatballs tastes great with blue cheese dressing or blue cheese crumbs on top. Highly recommend you don’t skip it.

What To Serve With Buffalo Chicken Meatballs?

As appetizer – Serve buffalo chicken meatballs with celery stick, carrot sticks, and extra buffalo hot sauce and blue cheese dressing on the side. This will be the most popular appetizer on your game day table.

As main dish – yes you can serve buffalo chicken meatballs as main dish. We love meatballs dunked in spicy buffalo hot sauce and served over bowl of rice. Eating low carb? Try serving buffalo chicken meatballs with cauliflower rice. So delicious!

Can I Make Ahead Buffalo Chicken Meatballs?

Buffalo chicken meatballs are best enjoyed immediately hot! I do not recommend making these ahead and storing it once chicken meatballs are cooked. Because when you reheat meatballs it will turn dry.

Ingredients
  

Chicken Meatballs-

I used small oxo scoop to shape meatballs. It yields 24 small cocktail meatballs.
