These spicy buffalo chicken sliders are reminiscent of buffalo chicken dip. An easy, pull-apart showstopper dish featuring fluffy slider buns smothered in cheesy dip, filled with juicy, spicy buffalo chicken, and topped with loads of cheese, baked to cheesy perfection.

1cupcooked chickenshredded (I used rotisserie chicken, any leftover cooked chicken will work)
½cupFrank’s Buffalo Hot Sauce
½cupRanch dressing

4-6cheddar cheese slicesI use herb cheddar cheese slices

8-10pickled jalapenos

Instructions
Preheat the oven to 350°F.
In a bowl, add shredded cooked chicken (you can use rotisserie chicken), buffalo hot sauce, ranch seasoning, honey, minced garlic, salt and pepper. Mix well and set aside.
Using a serrated knife, slice the dinner roll in half; don’t pull apart the rolls. Keep them intact.
Lightly brush melted butter over the lower half of the dinner roll.
Spread the cheesy dip; I used spicy nachos cheese dip.
Place cheddar cheese slices and top it with juicy buffalo chicken generously over the top.
Sprinkle green onion and cilantro over the chicken.
Arrange a few pickled jalapenos; you may also use candied jalapenos. This is an optional step.
Generously cover the top with a mix of freshly shredded cheddar and mozzarella cheese.
Cover it with the top half of the dinner roll.
To the melted butter, mix chopped cilantro and Italian seasoning.
Mix well and brush it generously over the dinner rolls.
Finally, sprinkle a little poppy seed over the rolls.
Bake in a pre-heated oven at 350°F for 10-12 minutes.
Serve them hot.

Any leftover cooked chicken will work. Best to use chicken that isn’t heavily seasoned, so the flavours don’t clash with buffalo hot sauce.
Spread all the filling evenly, so you get a taste of everything in a bite.
Add more toppings of your choice – lettuce, crunchy refrigerated pickled red onions, sliced tomatoes, and use blue cheese dressing.
