Ingredients Needed
Broccoli head cut into even sized florets or use frozen broccoli
Garlic – I used fresh garlic, substitute with garlic powder
Red Chili Flakes – can be substituted with cayenne pepper or smoked paprika
Sea Salt and Freshly ground pepper – the key seasoning for any roasted vegetable. Broccoli with just salt and pepper is absolutely delicious; you would really not need anything more. Don’t miss pepper.
Olive oil – use best quality extra virgin olive oil
Parmesan – can be substituted with freshly grated cheddar cheese too. We love it with Parmesan cheese.
How To Roast Broccoli In The Oven?
This oven roasted broccoli is really easy to make and fast. You’ll only need 15 minutes to roast and serve.
Prep Work –
Pre heating the oven, cutting out broccoli florets is all the prep work that needs to be done. It hardly takes 10 minutes. You break florets using your hand or use a knife to cut it out. Whichever method you follow, just ensure you stick to same size of florets so they all cook evenly.
Pre heat the oven at 450 degree Fahrenheit.
Cut even sized broccoli florets. I make thin slices of these florets instead of a big chunky floret.
If using fresh garlic, cut thin long slices of garlic.
Arrange all the florets in single layer on a baking tray greased with olive oil.
Roasting Broccoli –
Spread thin garlic slices, red chili flakes, sea salt, freshly ground pepper and drizzle generous amount of olive oil over the broccoli.
Using your fingers gently coat every florets with olive and spices.
Arrange broccoli with flatter side down on the baking tray. DO NOT OVER CROWD the pan.
Roast broccoli in pre heated oven at 450 degree Fahrenheit, stirring it once half way through.
NOTE: roasting time will depend hugely on the size of the broccoli florets.
I made thin slices of broccoli from the florets and my roasting time was 12 minutes. Note I did not roast until broccoli was brown. Took it out a minute or two early, so it was just beginning to brown. I love that texture of broccoli where stem is tender and the edges are slightly crispy and brown. This is personal preference!
When almost cooked through, remove tray from oven, sprinkle all the cheese on top and place it back in the oven and continue roasted for another 2 to 3 minutes or until cheese begins to melt.
Roast broccoli until it’s done. ‘Done’ can mean it’s roasted nicely and turned brown or you can stop it when edges begin to turn brown, and stems are tender. The way you prefer.
Pro-Tip: if you want crispy roast broccoli, broil the broccoli for 2 minutes at the end of roasting time.
Remove from the oven and serve it immediately.
FAQ’s On Oven Roasted Broccoli
How Long To Roast Broccoli?
Roasting time for broccoli hugely depends on the size of the florets. Smaller florets will need shorter time in the oven for roasting; larger florets will need longer bake time.
Roast broccoli for 12-20 minutes until it’s cooked through. Check by poking with a fork for doneness, it should be fork tender.
You can choose to roast broccoli with green tender stems (remove the tray just when broccoli florets edges begin to brown) or roast until it’s stem is nicely browned and caramelized (allowing it to roast until all florets have turned brown and charred).
If using frozen broccoli, roasting time will be the same as roasting fresh broccoli (well of-course depends on the florets size). However I do recommend you to broil at the end of roasting time for 1 or 2 minutes to make it crispier.
Can I Roast Frozen Broccoli?
Yes, you can. You can use the packet of frozen broccoli directly and roast it in oven, exactly the way this recipe is written. At the end of roasting time, consider broiling it for 1 or 2 minutes to helps broccoli crisp up.
How To Make Roasted Frozen Broccoli?
Line up a baking tray with parchment paper. Preheat oven with the baking tray in it at 450 degree Fahrenheit.
Add frozen broccoli to a bowl. Add the seasonings – garlic, red chili flakes, sea salt, freshly ground pepper and olive oil. Toss everything to-gether.
Arrange broccoli on baking tray lined with parchment paper in single layer without overcrowding the pan with flat side of the broccoli on the tray.
Roast in oven for 14 to 18 minutes until broccoli is browned and tender.
Broil for 1 or 2 minutes at the end of roasting time to make it crispy. Serve immediately.
How To Store Roasted Broccoli?
It’s best to serve it immediately as soon as it comes out of the oven. It tastes best with brown edges, crispy bits while it’s hot.
If you do have leftovers, you can store it in air tight containers in the fridge for 3 to 4 days. Please note, broccoli will loose it’s crispiness once stored.
How To Reheat Broccoli Roast?
You can reheat broccoli stored in the fridge in microwave at high power for 1 or 2 minutes. Note this will not turn broccoli back crispy again. It will be tender and soft, but it’s still good!
If you do want to make it crispy again, consider reheating in oven. Preheat oven with the baking tray in it at 375 degree Fahrenheit. Remove broccoli from fridge and arrange on baking tray and warm it up for 10 to 14 minutes. It may turn the edges slightly crispy.
Roasted Broccoli Seasoning Ideas
You really can’t go wrong with this simple side dish that tastes absolutely delicious with just plain salt, pepper and olive oil. But there are so many other ways to season the broccoli for making roast.
Here are a few suggestions for you to give a try:
Garlic Roasted Broccoli – broccoli loves garlic. With fresh garlic sliced thin or dried garlic powder, add sea salt, freshly ground pepper, olive oil. Roast in oven.
Cheesy Roasted Broccoli – roast broccoli with your favorite seasoning. Finally toss it with grated Parmesan cheese and return to broiled and roast until cheese melts, you have your best Parmesan roasted broccoli ready to serve with any side dish. You can make cheesy broccoli roast with freshly grated cheddar cheese as well.
Spicy Roasted Broccoli – if you like to add a spicy kick to the broccoli roast add red chili flakes and cayenne pepper along with rest of the seasoning.

Roasted Potatoes and Broccoli – using baby potatoes sliced into half it’ll roast the same time as broccoli. If using large potatoes, cut each potato into quarter.
