The Best Bakery Style Egg Puffs with Puff Pastry

There’s something so comforting about a warm bakery style egg puff. Crisp, flaky puff pastry wrapped around a spicy onion masala and a perfectly cooked hard-boiled egg makes this a simple snack that is hard to resist. 

These egg puffs are inspired by the classic bakery-style puffs you find in Kerala bakeries. The filling is made with sliced onions, fennel seeds, ginger, green chili, curry leaves, and a few warm spices. It’s the most comforting tea time evening snacks served with ketchup on the side.

For the Egg Puffs 

  • Puff pastry squares 
  • Eggs 
  • Egg wash, for brushing 

For the Kerala-Style Onion Masala 

  • Onions, thinly sliced 
  • Fennel seeds 
  • Ginger, cut into thin juliennes 
  • Green chili (serranno peppers), finely chopped or sliced 
  • Curry leaves, torn into small pieces 
  • Turmeric powder 
  • Kashmiri red chili powder 
  • Garam masala powder 
  • Black pepper 
  • Salt 
  • Ketchup 
  • Oil 

The combination of fennel seeds, ginger, curry leaves, and spices gives the onion filling that familiar Kerala bakery flavor. Kashmiri chili powder adds a beautiful red color without making the filling overly spicy. 

Step-By-Step Instructions

Step 1: Place the eggs in a saucepan and cover them completely with water. Bring the water to a boil, then cook the eggs for about 7-8 minutes for firm, fully cooked yolks. 

Step 2: Immediately transfer the eggs to a bowl of ice water and let them cool completely. This stops the cooking process and helps prevent the yolks from becoming dry or developing that gray-green ring around the outside. 

Step 3 & 4: Once cooled, peel the eggs and cut them in half. 

Tip: Don’t skip the ice bath. It makes a noticeable difference when you want nicely cooked eggs with bright yellow yolks.

Step 5: Heat oil in a pan over medium heat. Add the fennel seeds and let them sizzle for a few seconds. Add the ginger juliennes, green chili. Sauté briefly until fragrant. 

Step 6: Add the sliced onions and a little salt. Cook until the onions soften and become lightly golden. You don’t need to caramelize them deeply; they should still have a little texture. 

Step 7: Add turmeric powder, Kashmiri red chili powder, garam masala, and black pepper. Stir well and cook for another minute so the spices blend into the onions. 

Step 8: Add splash (1 tablespoon) water and cook on medium low flame. Water prevents the spices from burning and helps blend the spices with onion.

Step 9: Cook until onion mix looks caramelised and dry.

Step 10: Finally, add the ketchup and torn curry leaves mix everything together. Cook for another minute or two until the filling looks well combined and fairly dry. Taste and adjust the salt or pepper if needed. 

Important: Let the onion filling cool before assembling the puffs. A hot filling can soften the puff pastry and make it harder to seal. 

Step 11: If you’re using frozen puff pastry, thaw it according to the package directions. Keep the pastry cold but flexible. Place one puff pastry square on your work surface. Add a spoonful of the cooled onion masala to the center and place half of a boiled egg on top, cut side down. 

Step 12: Wet your fingers in water and apply it around the edges of the puff pastry. Bring the pastry corners toward the center and gently seal the edges. You can lightly press the edges together with your fingers or a fork. 

Repeat with the remaining pastry squares, onion filling, and eggs. 

Place the assembled puffs on a parchment-lined baking sheet. 

Brush the tops lightly with egg wash. This gives the Kerala bakery egg puffs that beautiful golden-brown finish once baked. 

If you like, you can make a few small cuts on the top of the pastry for decoration, but this is completely optional. 

Optional step – sprinkle black sesame seeds on top of the assembled egg puff.

Bake in a preheated oven according to your puff pastry package directions, generally around 400°F (200°C), until the pastry is puffed and beautifully golden brown. 

Let the egg puffs cool for a few minutes before serving. The pastry will be crisp on the outside while the onion masala remains soft, spicy, and flavorful inside. 

Serving Suggestions

These puffs are delicious on their own, but they’re especially good with ketchup for dipping and a hot cup of:

Tips for Making the Best Egg Puffs With Puff Pastry

  1. Don’t overcook the eggs. The egg is one of the main components of this snack, so avoid cooking it until the yolk becomes dry. An ice bath immediately after boiling helps stop residual cooking. 
  2. Cook the onion masala until fairly dry. A wet filling can make the puff pastry soggy and difficult to seal. 
  3. Cool the filling before assembling. Warm filling can soften the pastry before it even reaches the oven. 
  4. Keep the puff pastry cold. If the pastry becomes too soft or sticky while you’re working, place it in the refrigerator for a few minutes before continuing. 
  5. Don’t overfill the pastry. It can be tempting to add lots of onion masala, but too much filling can cause the pastry to open while baking. 
  6. Use Kashmiri chili powder for color. It gives the filling that lovely reddish color while keeping the spice level relatively mild. 

Storage

Egg puffs are best enjoyed fresh from the oven when the pastry is crisp and flaky. 

If you have leftovers, let them cool completely and store them in an airtight container in the refrigerator. Reheat them in an oven or air fryer to bring back some of the crispness. 

Avoid reheating them in the microwave, if possible, as the puff pastry can become soft.

Yes. Reduce the green chili and black pepper according to your preference. Kashmiri red chili powder is mainly useful for color, so you can adjust the amount as well. 

Can I freeze Kerala egg puffs? 

For the best texture, I recommend freezing the assembled unbaked puffs rather than fully baked ones. Freeze them on a tray until firm, then transfer them to a freezer-safe container. Bake from frozen, adding a little extra baking time as needed.

Ingredients
  

For the eggs

  • 4 large eggs

For the onion masala

  • 2 medium onions thinly sliced
  • 1 teaspoon fennel seeds
  • 1 tablespoon ginger cut into thin juliennes
  • 1 to 2 green chilies (serrano peppers) sliced
  • 8-10 curry leaves torn
  • ½ teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chili powder
  • ½ teaspoon garam masala powder
  • ½ teaspoon black pepper
  • Salt to taste
  • 1 to 2 tablespoons ketchup
  • 2 tablespoons oil (canola oil, sunflower oil, vegetable oil, or coconut oil)

For assembling

  • 8 puff pastry squares
  • 1 egg beaten with 1 teaspoon water, for egg wash

Instructions
 

  • Boil the eggs for about 7-8 minutes until the yolks are fully set. Transfer them immediately to ice water. Cool, peel, and cut each egg in half.
  • Heat oil in a pan. Add fennel seeds and let them sizzle.
  • Add ginger, green chili. Sauté until fragrant.
  • Add sliced onions and salt. Cook until softened and lightly golden.
  • Add turmeric, Kashmiri chili powder, garam masala, and black pepper. Cook for about a minute.
  • Add splash (1 tablespoon) water and cook on medium low flame. Water prevents the spices from burning and helps blend the spices with onion.
  • Cook until onion mix looks caramelised and dry.
  • Stir in the ketchup and cook until the onion mixture is well combined and fairly dry.
  • Allow the masala to cool completely.
  • Place a puff pastry square on a flat surface. Add some onion masala to the center and place half a boiled egg on top.
  • Fold and seal the pastry around the filling.
  • Place the puffs on a lined baking sheet and brush the tops with egg wash.
  • Bake in a preheated 400°F (200°C) oven until puffed and golden brown, following the baking time recommended for your puff pastry.
  • Cool for a few minutes and serve warm.
