- Choice of cheese makes a whole lot of difference. The best choice of cheese makes the best cheese sauce. And more the cheese you use, the better the dip tastes!
- Cow’s milk cheese is great choice. They have enough moisture and melt well in hot liquids. Cheese like cheddar, mozzarella, Pepper Jack, Monterey Jack are best cheese to use in the recipe.
- Stay away from hard cheese like Parmesan, Gruyere.
- Always buy block cheese and grate it fresh just before making the cheese sauce. Pre-grated cheese is coated with substance while packing. This will make cheese not melt smoothly.
- Do not cook this sauce on high heat. You don’t want to boil the cheese sauce. Cook on gentle heat.

Step 1 :
Softened cream cheese at room temperature to make it easily blend in. This step is crucial. To a sauce pan, add softened cream and melt it on gentle heat (on medium low flame). Pour beer slowly and keep whisking to blend into cream cheese.
Pro-Tip : Do not melt cream cheese on high heat or boil it. It will turn grainy and form lumps.
Step 2 :
Keep whisking and cook on low heat. until cream cheese is fully blended.
Step 3 : Stir freshly grated cheese. Sharp cheddar, Mozzarella cheese is my choice of cheese.
Step 4 :
Next add the seasoning. Add garlic powder, mustard powder, smoked paprika and salt and pepper to taste.
Note : Be careful before you add salt. The saltiness in the cheese might be enough. If needed, season and taste as you go.
Step 5 :
On low/gentle heat keep stirring to help cheese melt. Once cheese is completely melted, transfer to serving bowl.
Serve immediately with warm pretzels.
