Addictive gochujang mayonnaise

Turn an ordinary meal into umami umami-flavored delicious meal with spicy Korean mayo. A simple spicy sauce can take the meal to a whole new level, making it amazing. This sauce is the perfect accompaniment for tacos, burgers, sandwiches, and seafood.

Gochujang mayo is made using 2 main ingredients mayonnaise and gochujang. A couple of spices take this sauce to the next level.  A squeeze of fresh lime juice (or lemon juice) adds fresh brightness balancing the creamy mayo.

The chili heat from gochujang paste is mellowed down by creamy mayo giving it mild heat. Make it as mild or spicy to fit your taste.

Taste it once you’ll want to eat this spicy Korean mayo with everything. It’s a great make-ahead dip, make and store it for a few days in the refrigerator.

If you like light and refreshing sauce try Nuoc cham a Vietnamese dipping sauce.

Ingredients

Mayonnaise – I used regular mayonnaise. Japanese Kewpie mayonnaise is slightly sweeter and tangier than regular mayo. It also packs a wonderful umami flavor. Most Korean (and Japanese) recipes usually call for Kewpie mayo. Since it has a tangy flavor profile, skip adding fresh lime juice if using Kewpie mayo.

Gochujang paste aka Fermented Korean red chili bean paste – The flavor of gochujang is intense and a little goes a long way. It’s readily available in Asian stores. The spiciness of this fermented chili bean paste varies depending on the brand you use.

Garlic powder – optional, I love garlic, for that extra savory flavor you can add garlic powder, even onion powder.

Lime juice (or lemon juice) – use freshly squeezed lime juice. A squeeze of fresh lime juice (or lemon juice) adds fresh brightness balancing the creamy mayo.

Season – salt & pepper to taste. Add salt if needed only.

Ingredients additions & substitutions

  1. If you can’t get your hands on gochujang, you can substitute it with sriracha. Add according to taste preference.
  2. Freshly squeezed lime juice can be substituted with rice vinegar
  3. For extra flavor add onion powder.
  4. Add ketchup for added flavor.
  5. Add ¼ teaspoon of sesame oil for nutty aroma.
  6. For sweetness stir in maple syrup.

How to make it

Quite simply add all ingredients to a bowl and whisk. That’s it!

You don’t even need a recipe for this. The amount of gochujang you want to add entirely depends on your taste preference.

Serve immediately as a dipping sauce for French fries, potato wedges, and sweet potato fries, with fried shrimp, fried chicken, and schnitzel. Spread it over burgers, sandwiches, or drizzle over tacos.

How to use Korean mayo

You can make it into pourable consistency and use it as a salad dressing over a simple salad.

FAQS

What can I use instead of gochujang?

There is no substitute for this. If you are making Korean-style mayo, gochujang is a must. This fermented red chili bean paste can be found in the Asian market.
However, add sriracha or sweet chili sauce to make spicy mayo dip, I wouldn’t call it Korean mayo though.

Can I use any base mayonnaise?

Most Korean (and Japanese) recipes usually call for Kewpie mayo. Kewpie mayonnaise is slightly sweeter and tangier than regular mayo. And it also packs a wonderful umami flavor. I used regular egg mayonnaise and it works.

Is gochujang spicy?

It is a spicy paste with an umami savory tone to it. It’s called Korean chili paste as it has a spicy flavor tone to it. The heat levels of Gochujang paste will vary with different brands, please taste first and then adjust the amount.

How to store leftovers?

Cool leftover sauce completely and then store it in an air-tight container in the refrigerator. It’ll keep for 2 weeks.
