Roasted leeks is simple, easy to make side dish! Roasting leeks in oven with spice mix and cheese makes it one of the unique but most delicious side dish alongside any grilled or roasted meat!

Why Should You Roast Leeks in Oven

1. If you have been wondering what else to do with leeks other than using in soups and stocks we got you covered!
2. Roasting leeks in oven makes it tender and very delicious! With this amazing spice rubs and freshly grated Parmesan cheese, you’ll have the most unique but wonderful side dish which pairs well with any grilled meat!
3. Though it serves grated with grilled meat, you can add it to pastas, soups, salads dishes too.
4. Recipe is totally customizable. Use any spice mix of your choice to flavor it up!
5. Leeks have flavors similar to bulb onions! Use roasted leeks in place of bulb onions in dishes like pasta, salads and soups.

Ingredients Needed

Parmesan Cheese:  highly recommend not to skip cheese. For best results you should use freshly grated Parmesan cheese.

Cayenne Pepper: leeks are like blank open canvas. It has neutral flavors, so you can jazz it up with any spices or flavors you will like! Though you can get away with plain salt and pepper seasoning with olive oil, adding extra heat takes it top notch.

Butter: Adds richness to leeks. You’ll love that flavor!

How To Cut and Clean Leeks

The hardest part of leek is cleaning it. Usually dirt gets collected in between the layers of leeks, so it can be little hard to get rid of the dirt.

You can use all parts of leeks, white part is what you need to make roast leeks. Do not discard green part of it. Chop it up fine and use it to make stocks that can be used in soups or cooking rice.

To Cut Leeks:

Trim off the root ends and tough top green leafy parts from the white stalk of leek. Keep white stalk whole.

Cut white stalk into half-length wise.

To Clean Leeks:

Fan out layers of leek to separate it out without pulling it apart. Hold it under running water and fan open the layers to wash out any grits in between the layers.

How To Roast Leeks in Oven

Spice Rub Mix:

First let’s make the spice mix. You can use plain salt and pepper for seasoning. Adding cayenne pepper makes it more flavorful and tasty.

To make spice rub simply mix together salt, freshly ground pepper, cayenne pepper and olive oil.

Prep:

Arrange sliced leeks on greased baking tray in single layer.

Apply spice mix evenly all over. Using your fingers to work through the layer to ensure spices are spread evenly.

Cook:

Pre heat oven at 400 degree Fahrenheit.

Cover leeks with aluminium foil. Roast in oven for about 20 to 25 minutes or until leeks are cooked to fork tender consistency.

Remove leeks from oven. Remove aluminium foil and place tray back into oven for another 5 to 10 minutes.

Remove tray once again, spread butter over it and sprinkle freshly grated Parmesan cheese. Continue to cook in oven for 2 to 3 minutes more until cheese melts.

Serve it hot.

Ways To Serve Roasted Leeks

Leeks can be served as one of the most delicious side dish alongside any grilled or roasted meat!

You can even add it to your pasta or salads or soups.

It can also be served with creamy cheese polenta.

  • 4 leeks

Notes

  • For best results use fresh grated Parmesan cheese. It makes the dish taste much better.
  • Cayenne pepper is optional. But highly recommended. Adjust the quantity as per your spice tolerance levels. 
  • Garnish with parsley before servings.
  • Leeks and potatoes are the most popular combination. If you want to roast leeks with potatoes, cut leeks into one inch circles. Roast it with chopped potatoes along with salt and pepper in olive oil.
