Roasted leeks are a simple, easy-to-make side dish. Roasting leeks in an oven with incredible spice mix and cheese makes it one the most delicious side dishes. Pair it with grilled chimichurri chicken or any meat roast!

Why does this recipe work?

- It can be paired with almost anything. It’s perfect with grilled meat, you can also add it to pasta, soups, and salads.
- The recipe is customizable. Use any spice mix of your choice. I suggest you try with Cajun seasoning or Creole seasoning or use seasoning salt.
Ingredients
- Leeks – pick large leeks for this recipe. Leeks should be washed and trimmed. I explain below how to do it.
- Parmesan cheese: For the best taste, use block cheese and grate it when needed. I highly recommend not to skip cheese.
- Cayenne pepper: leeks have neutral flavors, so you can jazz it up with any spices or flavors. Use any spice mix of your choice. I suggest you try with Cajun seasoning or Creole seasoning or use seasoning salt.
- Butter: Adds richness to leeks.
How to trim and wash leeks
Usually, dirt gets collected in between the layers of leeks, so it can be a little tricky to get rid of the dirt. The white part is what you need to roast. Remove the outer green part, discard the tough ones. Chop the tender green part and use it to make stock or use it in potato leek soup.
Step 1: Trim off the root ends and tough top green leafy parts. Cut the white stalk length-wise into half.
Step 2: Fan out layers of leek to separate it without pulling it apart. Rinse under tap water while opening the layers gently to wash out any grits in between the layers.
Place leeks on a kitchen towel and pat dry completely.
Step-by-step instructions
Step 3: Add salt, freshly ground pepper, cayenne pepper, and olive oil to a small bowl.
Step 4: Mix well.
Step 5: Grease the baking tray with olive oil.
Step 6: Arrange sliced leeks on a greased baking tray in a single layer.
Step 7: Apply spice mix evenly all over.
Step 8: Cover leeks with aluminum foil—roast in the oven for about 20 to 25 minutes or until leeks are cooked to fork-tender consistency.
Step 9: Remove leeks from the oven. Remove aluminum foil.
Step 10: Place the tray back into the oven for another 5 to 10 minutes. Remove the tray, spread butter, and sprinkle freshly grated Parmesan cheese. Place it back into the oven for 1-2 minutes until the cheese melts.
Serve it hot.
Tips
- For best results use fresh grated Parmesan cheese. It makes the dish taste much better.
- Cayenne pepper is optional. I highly recommend it. Feel free to adjust as per your taste preference.
- Garnish with parsley before servings.
- Leeks and potatoes are the most popular combination. If you want to roast leeks with potatoes, cut leeks into one-inch circles. Roast it with chopped potatoes along with salt and pepper in olive oil.
Serving suggestion
It can be paired with almost anything. It’s perfect with grilled meat, you can also add it to pasta, soups, and salads.

📋Simple Oven Roasted Leeks With Olive Oil and Parmesan
Ingredients
- 4 leeks
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 ½ teaspoons cayenne pepper
- 2 tablespoons butter
- ¼ cup Parmesan cheese freshly grated
Instructions
- Preheat oven at 400 degrees Fahrenheit.
- Trim off the root ends and remove tough top green leafy parts from the white stalk of leek. Keep the white stalk whole.
- Cut the white stalk into half-length wise.
- Fan out layers of leek to separate it without pulling it apart. Rinse under tap water to wash out any grits in between the layers.
- Mix salt, freshly ground pepper, cayenne pepper and olive oil.,
- Arrange sliced leeks on a greased baking tray in a single layer.
- Pour the spice mix evenly all over. Use your fingers to work through the layer to spread spices evenly.
- Cover the tray with aluminum foil—roast in the oven for about 20 to 25 minutes or until leeks are cooked to fork-tender consistency.
- Remove aluminum foil and place the tray back into the oven for another 5 to 10 minutes.
- Remove the tray once again, spread butter over it, and sprinkle freshly grated Parmesan cheese. Continue to cook in oven for 2 to 3 minutes more until cheese melts.
- Serve hot with roast meat. It's perfect for Sunday roast dinner.
