Ingredients you’ll need
Here’s what you’ll need-
- 20 large strawberries
- 24 ounces melting white chocolate (or dark green candy melts)
- Few drops liquid green candy food color (skip this if using dark green candy melts)
- 20 ginger cookies (you may use oatmeal cookies, OREO as well)
- ¼ cup Holiday sprinkles
- 20 Yellow star candy
Ingredients substitutions and additions
Candy melts-
If you have easy access to candy melts use dark green candy melts or of course, any other colored candy melts. I used melted white chocolate and stirred it with dark green color for coating the strawberries. Reserve â…“ cup of melted white chocolate before adding food color, this will be used to dip cookies that will help adhere strawberries on top of it.
Cookies-
You can use any round cookies of your choice for the base for the strawberry Christmas tree. Gingersnaps (ginger cookies), oatmeal cookies, and OREO are best choices.
Sprinkles-
Multicolored holiday nonpareils can be used, or simply use white sprinkles for snow effect.
How to make chocolate covered strawberry Christmas tree
Highly recommend to use dark green candy melts. Feel free to use other colors that your heart desires.
If you can’t get candy melts, you can use melting white chocolate and stir in green food color in it.
If using green candy melts use the same for frosting cookies to stick strawberry over it. Or you can melt â…“ cup of white candy melts and use that to frost cookies – the choice is yours.
Chop the white chocolate into small pieces. Melt chocolate or candy melts in a microwave-safe bowl for 30 seconds intervals in the microwave, stirring in between until the chocolate is almost completely melted. Keep stirring, the residue heat of the bowl will melt the chocolate completely. Alternatively, you can use a double boiler.
Reserve â…“ cup of melted white chocolate. To the remaining melted chocolate add a few drops of green food color, and stir well until the color gets blended completely.
Note: you MUST use special color to stir into melted chocolate. These are called candy color, they are liquid gel like colors. If regular food colors are used to melted chocolate can cause it to seize, turn it very hard and unable to be used.
Cut stem end off strawberries to create flat surface for berry to stand on top of cookies.
Spear flat side of each strawberry with a tooth pick (if tooth pick slides off the berry, spear it on tip end of the berry so it holds it).
Dip strawberry into melted chocolate, swirl it gently, and shake off the excess chocolate coating. Immediately sprinkle with nonpareils sprinkles and top a star candy on top of the berry.
Place the chocolate covered berry on a tray lined with parchment paper. Repeat for all remaining strawberries.
Frost gingersnaps or ginger cookies or oatmeal cookies or OREOs with white chocolate.
Before the chocolate frosting sets, place a strawberry on top of frosted cookie so strawberry Christmas tree sticks to the base cookie.
You can chill strawberries uncovered in the refrigerator until set.
Once Christmas tree is completely hardened serve. Enjoy!
Simple tips for glossy melted chocolate
- If using a melting chocolate bar, chop it into small pieces. Melt chopped chocolate candy melts in a microwave-safe bowl with ¼ teaspoon of coconut oil if needed. It’s critical no water get into candy melts, as they will seize up.
- Melt at 30 seconds intervals stirring regularly. Melt in the microwave until the chocolate is 90% melted. Remove from microwave, and stir until the chocolate is fully melted, glossy and smooth.
- Work fast on strawberries as candy coating can firm pretty quickly. Add sprinkles and a candy star topper fast.
Storing instructions
Strawberry Christmas tree should be eaten the same day preferably a few hours after it’s made. Strawberries dipped in chocolate do not keep well, if stored longer strawberries will release water that can seep down the cookies making it soggy.
Place strawberries coated in chocolate for few hours in fridge until ready to serve. Use it within few hours.
