This high-protein, high-fibre, ultra-creamy white bean hummus is made in a jiffy. This easy party dip is made with any white beans, tahini, olive oil, garlic, extra virgin olive oil, and lemon juice. This versatile dip is perfect to be served with garlic bread toast, crackers, and vegetable sticks.
Drain a can of white beans in a colander. Rinse it in water.
Add all the ingredients – cannellini beans, 2-3 tablespoons of liquid from the can, tahini, extra virgin olive oil, garlic cloves, ground cumin, ground coriander, a hint of red chilli flakes (optional), salt, lemon juice and an ice cube into a blender and blend.
Blend until smooth and creamy, scraping down the sides of the blender with a spatula.
Taste and add seasoning accordingly.
If the dip is too thick and lumpy, add 1 or 2 more ice cubes or a teaspoon of chilled water while blending.
Transfer to a serving bowl and garnish with extra virgin olive oil, red chilli flakes, and fresh thyme. Serve alongside garlic bread toast, vegetable sticks, and crackers.
