Vegan Chocolate Mint Popsicles

Vegan mint chocolate Popsicle is one of the simplest, creamiest, deliciousness. Rich chocolate chunk paired with refreshing mint to brighten your summer days! This mint chocolate popsicle recipe is naturally gluten-free, dairy-free, and vegan – and it can be made with just SIX ingredients!

This wonderfully aromatic summer Popsicle is as good as it gets. It only needs a few ingredients to make and few minutes of prep work. I promise! It’s a real vegan summer treat!

There is excitement in the air, kids are restless and so I am but I’m trying to keep calm and get the necessary things done before we all take off. This is the most exciting part of summer for me – planning and going on a holiday apart from ice creams and frozen treats that we over do during summers. Summer I love you!

This holiday is an extra special one, we group of friends has been planning this holiday for more than 6 months.  This holiday will sure been an awesome one I know for sure.

I can’t believe I’m sitting with my lappy and writing this post like early morning today while we are heading to airport by night. I mean not that I left all other work and doing this, we’re almost all packed.

The excitement is too much that I’m unable to sleep. Was tossing and turning all night on the bed, just couldn’t do that anymore so I got out to-do something constructive. While I have been keeping many posts pending I thought I will post this Popsicle recipe before we head off.

Vegan Chocolate Mint Popsicles

A few weeks back I did a community service by taking up baking classes for children in my layout. It was all a super fun filled workshop where we (a group of 20 children including my kids) baked some yummy cookies, baked our own pizza all from scratch and even made some vanilla ice cream. The last day of the workshop was ice cream workshop. I made some extra surprise treats for kids to enjoy while they were waiting for the ice cream to freeze.  This recipe is adapted from here

This vegan mint chocolate Popsicle is the simplest Popsicle recipe. And since I was treating the kids I wanted to make it a little colorful so I used edible food color in it. There is also choco bits(or choco chips) in it for that awesome bite. This Popsicle is simple delicious, and coconut creamy with a beautiful aroma of mint in it.  One of the best summer treat for all. Try it out and enjoy a cool summer treat.

Come summer we never want to miss on ice creams and Popsicles. Mint and chocolate are those 2 amazing flavors that were meant to be together. The freshness from the mint and pepper mint extract, plus creaminess from coconut cream will make you wonder how could something so simple be so good! While there are millions of chocolate mint recipes out there, this is something unique, fresh and utterly satisfying. If you haven’t introduced yourself to chocolate chip mint desserts, it’s time you do it now. Because once you give it a try, you’ll never go back. With so many variations to this mint chocolate chip recipes you’ll never get bored.

I highly recommend you to use dark chocolate chunks or dark chocolate chips for this (or any) mint chocolate desserts. The flavors and taste balance so well. Not too sweet, just right balanced.

If you don’t have those fancy Popsicle molds, don’t fret! You can set beautiful round shaped Popsicle in disposable paper cups. Aren’t these cuties!

You see mint-chocolate combination never fails. You can make so many delicious refreshingly addictive desserts using this mint chocolate combination. And to me this vegan Popsicle is one of the best mint chocolate recipe. Why? Because the creaminess from coconut cream and the flavors of fresh mint with addictive glorious chunks of chocolate wins my heart every single time. It’s kind of less guilt-free dessert too. If only you did not add sugar in this Popsicle recipe it would be totally guilt-free.

How to make vegan mint chocolate chip Popsicles

Vegan mint chocolate chip popsicles is made with fresh aromatic mint leaves steeped in coconut cream along with sugar for sweetener. Feel free to swap sugar with any other sweetener of your choice.  If you are counting calories add condensed milk, and for healthier options use raw honey.

Filter steeped milk, and refrigerate it for few hours before pouring into popsicle moulds.

To chilled coconut mint cream add peppermint extract, green food coloring (optional – you can leave it white if you want), and chopped up chocolate bits or choco chips. Pour this milk into popsicle moulds. That’s it.

See, like promised you only need a few ingredients and it only takes a few minutes of prep work, and then you patiently wait for the popsicles to set.

What you get it seriously creamy, perfectly mint-y flavored Popsicles with those glorious bites of chocolate chunks, you’ll enjoy the bites.

Vegan Mint Chocolate Popsicles

Ingredients
  

  • 2 cups coconut cream
  • 1 cup mint leaves tightly packed
  • 1 ½ cups sugar adjust as per taste
  • ¼ teaspoon of peppermint extract
  • ½ cup semi sweet chocolate
  • 1 or 2 drops of green or sky blue gel food coloring

Instructions
 

  • Clean and wash mint leaves. Pick the leaves.
  • Heat coconut cream, sugar and mint leaves in a sauce pan. Once you see small bubbles turn off the heat. Let the mint leaves steep in the milk for about 45 minutes while it’s cooling.
  • Once milk cools completely, filter the milk and press the mint leaves as much you can to extract all it’s flavour’s.
  • Chill the milk for 2 hours in refrigerator.
  • Finely chop semi sweet chocolate and add to the chilled milk. Feel free to use choco chips. On the side note – A reminder to help me remember to buy choco chips.
  • Add the peppermint extra and food color, mix well.
  • Pour into popsicle moulds, cover and chill for about an hour. Then remove the mould from freezer, insert the popsicle stick now and cover it and put it back into the freezer to about 5 hours or over night.
  • Treat your little ones and family with this delicious popsicle.

    I just started using coconut milk for ice cream and always thought it would make a better popsicle. This is a great idea and the flavors are perfect! Definitely going to try this. The photos are also gorgeous!
