Homemade ghee is not that difficult as one might think. Prepared it the traditional way, from milk(milk cream/fat)to butter and then finally, to ghee. This ensure maximum nutrient value is retained.
This recipe is age old recipe passed on from my mom and she has been making ghee this way for ages! Free from chemical preservatives home made ghee is so healthy. Yes you heard it right, ghee is healthy. It’s believed that ghee when consumed in moderate quantity does wonders to your body.
Nothing can even come close to fresh, aromatic home made ghee. It’s so much so healthy and hygienic compared to the ones that you find in supermarket. But it’s different with my kids. They sit holding their nose complaining the whole time that it stinks. 😛
The fat or cream that forms on the surface of milk is collected in a box and stored in refrigerator for few days/weeks until you have enough and then churn the milk cream into butter first and then into ghee.
Desi ghee or clarified butter is must have pantry item in in any Indian kitchen. India’s relationship with ghee is long and complicated. The uses of homemade ghee in Indian kitchen needs no mention at all. From cooking to worship, it’s even used as healing element in some skin alignments. The list goes long.
During any Indian festivals, ghee is one of the most important ingredient be it to make festival sweet or for pooja. Every household has their own version of making homemade ghee. And why not, cause ghee can be made in many ways. You can simply use store bought butter and turn that into ghee which is liquid gold.
Or you can follow the age old tradition of collecting milk cream from everyday’s milk, freeze it and once you have enough cream, churn it and turn into ghee. Some also end up making ghee from cream bought from store.
Homemade Ghee Recipe From Milk
Today’s recipe is age old method of making ghee. Collecting milk cream by boiling every day milk and storing it in fridge until you have enough. If you are wondering why boil milk every day, well most people even now buy milk just for the day, some even buy fresh cow’s milk every morning.
Freshly bought milk is always boiled before use and when milk is boiled there is a layer of cream settles on top and this is what is collected and stored.
Since you only can get about 3-4 tablespoons of milk cream everyday, you need to wait for few days or weeks until you have enough cream to churn it and make ghee out of it.
Once you have enough milk cream, churn it using age old method of hand churning or use blender to pulse the cream. You’ll need to add chilled water while churning ghee to separate cream from milk or water. Collect all the white butter, rinse it couple of time in water. This will ensure the odour you get from milk cream is washed off.
The white thing that separates out can be used to serve over parathas or rotis. This is fresh homemade white butter.
Heat a pan(preferably non stick pan) and pour the butter into the pan. Cook on low heat with constant stirring. Make sure you keep stirring at regular intervals, else butter will start to burn from the bottom of the pan.
After about 40 minutes you will start to see ghee(clear oil like consistency) and milk solids start to settle at the bottom. The aroma of ghee indicates that ghee is ready to be strained.
Strain ghee through a sieve. Do not throw away the milk solids collected. If you stirred continuously, the milk solids will resemble brownish khoya. You can use that you make sweets like peda.

Homemade Ghee
Ingredients
- 2 cups milk cream/fat
- 2 teaspoon curd
- Ice cold water as required
Instructions
- In every Indian household milk is always boiled before use. While boiling milk a layer of fat/cream is formed on the top. Scoop out the cream from the milk and store it in air tight box in fridge. I collect milk on day to day basis and store it until I have enough(about 2 cups) before I start the process of making ghee. This will take a few days, few days of collecting milk cream or fat.
- Once you have enough fat/cream collected take out the milk cream from fridge. Whisk 2 teaspoon curd to the milk fat. Leave it in room temperature for 1 or 2 hours. Whisk one or twice during this time.
- Transfer the milk cream into a blender. Add ice cold water little at a time and pulse it for few times. Add water again and pulse. Do this many times and keep pulsing the blender. After about 15 minutes you will start seeing butter getting churned. Continue adding ice cold water again and pulse, after a few more times, butter should be completely separated from the cream.
- Pour the churned butter into a sieve or muslin cloth. Rinse freshly churned water a few times to get rid of all the smell. If you are planning to store butter for your homemade parathas or rotis, then this is it. Store the well rinsed butter into a box in fridge after all the water is drained out well.
- To continue to making ghee, heat a pan(preferably non stick pan) and pour the butter into the pan. Cook on low heat with constant stirring. Make sure you keep stirring at regular intervals, else butter will start to burn from the bottom of the pan.
- After about 40 minutes you will start to see ghee(clear oil like consistency) and milk solids start to settle at the bottom. The aroma of ghee indicates that ghee is ready to be strained.
- Strain ghee through a sieve. Do not throw away the milk solids collected. If you stirred continuously, the milk solids will resemble brownish khoya. You can use that you make sweets like peda.
- Store the ghee in air tight container at room temperature. This ghee stays good for very long time even for 6 months(well if it lasts that long) at room temperature.
