Corn salad is a universally approved salad, kids and adults all love it. You can add almost everything to the salad. Add cucumbers, cherry tomatoes, avocados, carrots, instant pot beets, canned black beans or other canned beans, Instant pot chickpeas, spinach, kale – anything that you like.
Have you tried corn salad with grilled chicken or grilled shrimp? You can grill shrimp and corn on the BBQ and toss them together to make the most delicious summer grilled corn salad.
Fresh sweet summer corn is best for the salad. Canned corn works when corn is not in season.
Elevate the salad with a simple salad dressing with lime juice and zest, olive oil, and a good pinch of salt and pepper, along with garlic and a hint of cumin powder.
Fresh herbs like cilantro or parsley add bright freshness.
Ingredients
- Sweet corn on the cob – Summer corn on the cob is the best choice. You can cook it your favorite way and use it to make a salad. Boil it, bake it in the oven, or grill it on fire(BBQ). I highly recommend grilled corn, with the amazing smoky flavor from fire it tastes the best!
- Ripe avocado – use ripe avocado.
- Cherry tomatoes – fresh cherry tomatoes add a tangy flavor which helps balance the sweetness from corn and the creaminess from avocado.
- Red onion – Use salad onions like red onions. adds a crispy crunchy texture to the salad. Note – If you can’t handle the astringent flavor of raw onion, pickled onion can be used as a substitute!
- Cilantro – love cilantro in my salad. Not a fan of cilantro? Try it with parsley or fresh dill.
Variations
Don’t feel obligated to stick to the recipe. You can make corn avocado salad in many ways.
- Give it a Mexican touch and add Parmesan cheese sour cream and Jalapeno for heat. Finish off with crumbled feta cheese.
- Give it a herby touch by including fresh leafy herbs like fresh basil, fresh dill, mint, parsley, or cilantro.
- Include other vegetables like radish, cucumber, or green onion.
- You could use a normal onion instead of red onion. Feel free to use shallots or green onion too.
- Add protein like grilled shrimp, grilled chicken (sliced into cubes), or grilled tilapia.
Ways to cook corn on the cob
Boil – Bring a large pot of water to boil on the stovetop. Place corn on the cob and boil it for 3 to 5 minutes. Or use instant pot to cook instant pot corn on the cob
Bake in oven – Remove the husk and the silk and discard the silk. Soak it in water for a couple of minutes. Cover corn on the cob with its husk and bake it in a heated oven at 350 F for about 20 to 25 minutes. You can even cover corn on the cob with aluminum foil and bake it.
Microwave – No need to remove husk and silk. Place the ear of corn in the microwave and cook on high for 2 minutes. Flip the corn and continue to cook for another 2 minutes. Remove it from the microwave, and place it on a wooden cutting board. Using a folded kitchen towel, cut off the bottom of the corn. Hold the top and squeeze it, corn will come out separately leaving behind the silk and husk. So easy!
Grill on BBQ – Grill it for 15 to 18 minutes rotating frequently to cook evenly on all sides.

Step 3: Cut the corn kernels off the cob. Tip: Place corn on a Bundt pan and slice off the kernels off the cob. You can also use a ramekin and place it in the center of a wide bowl, hold the corn on top of the ramekin, and cut the kernels with a knife.
Step 4: Add smoky char-grilled corn kernels (or boiled soft corn kernels)to a large wide salad bowl. Add cherry tomatoes, sliced red onions, ripe avocado, and fresh cilantro.
Step 5: To make salad dressing, pour in good quality olive oil, lime zest, freshly squeezed lime juice, salt and pepper to taste, minced garlic, and cumin powder. Mix it well until combined. Keep aside until use.
Step 6: Pour salad dressing over.
Toss well and serve!

Ingredients
- 2 Corn on the cob
- 1 ripe avocado
- 8 ounce cherry tomatoes cut into halves
- ½ red onion thinly sliced
- ½ cup fresh cilantro chopped
For Dressing-
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lime juice freshly squeezed
- 2 clove garlic minced
- 1 ½ teaspoon lime zest
- Salt and pepper to taste
- ¼ teaspoon cumin powder (optional)
Instructions
- Cook summer sweet corn on the cob the way you like it – boil, bake in the oven, or grill on BBQ.
- Once cooked, let it cool.
- Meanwhile, get the salad dressing ready. Into a jar pour in good quality olive oil, lime zest, freshly squeezed lime juice, salt and pepper to taste, minced garlic, and cumin powder. Mix it well until combined. Keep aside until use.
- Cut the corn kernels off the cob.Tip: Use a bundt pan to place corn on the cob in the middle and easily slice off the corn off its cob into the bundt pan. Or place a ramekin in the center of a wide bowl, hold the corn on the ramekin, and cut off with a sharp knife the corn off its cob.
- Add smoky char-grilled corn kernels or boiled soft corn kernels into a large wide salad bowl. Add cherry tomatoes, sliced red onions, ripe avocado cubes, and fresh chopped cilantro.
- Pour salad dressing over. Gently toss and serve!
