Guacamole is a staple in Mexican cuisine. It’s a dip or can be used as spread that is made of fresh ripe avocados, lime, garlic, jalapenos, salt and sometimes other fresh ingredients like red onions and ripe tomatoes.

Authentic guacamole recipe uses all fresh ingredients without any filler like sour cream, mayonnaise, cheese or yogurt.
The dip is best with nacho chips. You can also spread it on your tacos, burritos or a sandwich if you like.
Authentic guacamole recipe is usually made by mashing avocado in mortar and pestle and mixing in all the rest of the ingredients. If you have mortar and pestle, great way to put it to use by making this best homemade guacamole recipe.
If you don’t have a mortar and pestle, you can get it done with just a bowl and fork.

How Do You Make Guacamole (Step-By-Step Pictorial)
- Prep ingredients – I love to add ripe tomatoes and red onions to my guacamole. Chopping all ingredients before you start with avocados is key step. Prep all fresh ingredients you want to use in the recipe.
- Mash avocados – Cut perfectly ripe avocados into half length wise. Remove and discard the pit. Using a spoon scoop out the flesh, add it to a large mixing bowl. Using a fork or spoon mash avocados until your desired consistency. I like to add lime juice and season avocados sufficiently with salt before mashing. You can always add these after mashing too.
Pro-Tip : Try not to over mash or puree avocados. It needs to have some texture to it. If you puree or over mash it’ll loose the beautiful texture.
- Perfect lime-avocado ratio – It’s important to get the ratio of lime juice per avocado so you have well balanced guacamole. About 2 teaspoon of lime juice per avocado works best. You can always add a little extra if like little more zing in your guac.
- Sufficient seasoning – Use a generous pinch of sea salt to season avocado. Guacamole that is not seasoned sufficiently isn’t your best tasting guac! So ensure to add enough salt.
- Mix all ingredients – Mix in other ingredients – diced red onions, minced garlic, diced tomatoes, chopped jalapenos, fresh cilantro. Mix until combined.
- Taste & season – At last do a taste test. If guacamole isn’t seasoned sufficiently add extra salt or little more lime juice. If you want to make it spicier, you can add an extra jalapenos as per your taste. Increase red onions if you like the crunch in it. Add more cilantro for herbier taste.
- Serve immediately or store for later – If you wish to store longer read the section above on how to keep guacamole from turning brown. This method will help you store guac for 2 to 3 days in fridge.
It’s BEST to serve guacamole soon as it’s made. I mostly serve it with nachos or tortilla chips.
How to keep guacamole from turning brown
The biggest challenge when you make guacamole is keep it from turning brown. Guacamole is perfect green when you make it, but turns brown if left even for 10 minutes.
Tricks that I tried but didn’t help me 100%
Some tips and tricks to keep guacamole fresh and green is mentioned below. But be advised, these tips and tricks doesn’t help to store guacamole for longer time. It’s always BEST to make and serve it soon as you make it.
Most commonly heard trick is to add avocado pit to guacamole dish, add extra lime juice and place a plastic wrap on top! I found that the portion of guacamole around the pit remained green; the rest of the surface was brown half inch down.
Tried & tested trick to keep guacamole green for longer
To keep guacamole fresh and green add a thin layer of water on top of guacamole. You read it right, a thin layer of water covering the top of guacamole acts as barrier against oxygen.
This is the most effective method to keeping homemade guacamole fresh and green for three days in fridge. It may seem peculiar but trust me, water does not alter the texture and you won’t have to deal with extensively sour guacamole with extra lime juice method. Guacamole is thick and water would not dilute the texture or flavor of the dip.
To keep guacamole fresh and green – transfer guacamole into air tight container glass dish. Pack it tight, pressuring out any air bubbles. Pour a thin layer of water gently over the surface without disturbing the surface of guacamole. Make sure to cover the entire surface of guacamole.
Close the dish with air tight container. Refrigerate for 2 to 3 days.
When ready to eat, remove lid, gently pour out the water.
Give it a swift stir. Serve.
In fact the cilantro and onion flavor blends well into the dip after you pour out water. And the extra moisture in guac is amazing.

Guacamole found in jars may be packed with preservative and additives for long shelf storage purpose. Those stuff may have added sugar, can be high in sodium, and have a lot of preservatives. These are definitely not healthy for you.
Air is the biggest enemy for guacamole. Cut that perfectly ripe and green avocado, and if you get distracted within couple of minutes it’ll turn brown. As soon as oxygen hits avocado it begins to oxidize and age thus making it turn brown.
Your guacamole is only that good as your avocado. Picking the right avocado that is perfectly ripe and firm is the key to making the best guacamole. While buying avocados in the store, pick the ones that still has the stem attached.
If you pick the ones that has the stem removed, you’ll likely end up with avocado that has brown spots in the middle.
If you remove stem (when ready to make guac), it should be green underneath. And if it’s brown underneath, it’s over ripe.
To see if avocado is ripe, gently press on one end, it should have a little bit of give to it. But it shouldn’t be too soft and mushy.
If it doesn’t yield at all, then it’s not ripe and ready. If it doesn’t yield, give it a couple of days.
Thumb rule to pick the right avocado is –
Still has the stem on,
Should slightly yield to it,
Should be firm and not mushy.

- 1 jalapeno chopped
- 1 clove garlic minced
- 4 teaspoon lime juice extra 1 to 2 teaspoon if you like tangier guac

- ½ ripe tomato finely chopped
- 1 teaspoon sea salt
Instructions
- Prep ingredients – I love to add red ripe tomatoes and red onions into my guacamole. Chopping all ingredients before you start with avocados helps. Peel and chop garlic or mince in garlic press. Peel and dice red onions. Cut tomatoes into half, scoop out the seeds and chop fine. Dice jalapenos. If you like it spicy, leave seeds on. Finely chop fresh cilantro leaves.

Notes
- Pick right avocados that still has it’s stem and is ripe but still firm. If you press on one it should yield.
- Do not over mash or puree avocados. It’ll loose it’s beautiful texture.
- Definitely use fresh lime over bottled stuffs. Squeeze it fresh over avocado.
- If you don’t like raw garlic flavor, skip it. Adding ripe tomatoes is optional too.
- For extra spicy, add one more jalapenos with seeds on.
