Call it pasta salad or chicken pasta! When the dish is so simple to make and crazy delicious nothing else matters! Word ‘bruschetta’ is used here, because of the sauce that goes with the pasta. The sauce is made using the same ingredients for a bruschetta. And it has same flavors of bruschetta.
Classic bruschetta topping uses ingredients –olive oil, onion, garlic, tomatoes, salt, pepper, Italian herbs and balsamic. The same goes in making the sauce for bruschetta chicken pasta recipe as well! Hence the name!
This filling and satisfying pasta will easily become family favorite. When there is pasta and cheese, who can say NO.
Go generous on cheese. Give yourself a good generous sprinkle of Parmesan cheese over the top before you dig in.
Don’t forget the balsamic glaze. When bruschetta comes to mind, balsamic glaze is a must. It truly elevates the flavors of the dish and enhances the taste.

4 Things You Need For Bruschetta Chicken Pasta Salad
Chicken Breasts : Seasoned with simple Italian seasoning. Grill or sear in cast iron pan.
Pasta – Use your favorite pasta. Spaghetti, bow-tie, penne
Bruschetta Sauce – It screams summer all the way. Using ripe roma tomatoes prepare sauce by sautéing garlic, onions and ripe tomatoes in olive oil. Season it with salt, pepper and dried Italian herbs. Fresh basil adds freshness and wonderful flavor to this sauce.
Toppings – Like any classic bruschetta, balsamic glaze is MUST for this pasta salad. Generous serving of cheese – either Parmesan cheese, Romano cheese can be used.

How To Make Bruschetta Chicken Pasta – Step By Step Pictorial
Step 1: Season chicken breasts with salt, pepper, garlic powder and Italian herbs as per your taste. Sprinkle seasoning on both sides, rub to spread evenly.
Step 2 : Heat olive oil in cast iron skillet. Place chicken breasts. Sear and cook on both sides on medium low flame.
Step 3 : Once chicken breasts are cooked completely, remove it on to a plate. Slice it into as small or big piece. You can even shred the cooked chicken, your choice!
Step 4 : Into the same skillet, add few more teaspoons of olive oil. Saute garlic, onions on medium low flame.
Step 5 : Add chopped ripe roma tomatoes into the pan. Saute and cook until tomatoes are softened.
Note – I added cup of halved cherry tomatoes as well. This step is completely optional.
Step 6 : Season the sauce with salt, pepper and dried Italian herbs to your taste.
Step 7 : To enhance the flavors of the sauce, a cup of fresh basil (torn roughly) is added. Saute for a minute. Turn off flame and leave the sauce aside.
Step 8: Meanwhile cook pasta of your choice as per packet instructions. Make sure to cook to al-dente.
Step 9 : To cooked pasta, add bruschetta sauce. Toss to coat.
Step 10 : Add chopped (shredded) chicken on top.
Step 11 : Drizzle balsamic glaze.
Step 12 : Give a generous sprinkle of freshly grated cheese on top.
Step 13 : Serve immediately hot. Or refrigerate upto an hour before serving. Taste delicious both hot and cold.

- 1 teaspoon dried oregano
- 2 tablespoon extra-virgin olive oil

- Balsamic glaze is balsamic vinegar and brown sugar reduced down to thick consistency. I used store bought glaze.
- Along with ripe Roma tomatoes, cherry tomatoes are added in the recipe for aesthetic looks. This is optional step.
- Use freshly grated cheese for better results. Parmesan cheese or Romano cheese can be used.
