Bruschetta chicken pasta brings two best worlds together – chicken pasta and flavors of fresh bruschetta. It’s simple and very flavorful versatile chicken pasta dish that can be a complete meal.

Ingredients you’ll need
Chicken Breasts : Seasoned with simple Italian seasoning. Grill or sear in cast iron pan.
Pasta – Use your favorite pasta. Spaghetti, bow-tie, penne
Bruschetta Sauce – It screams summer all the way. Using ripe roma tomatoes prepare sauce by sautéing garlic, onions and ripe tomatoes in olive oil. Season it with salt, pepper and dried Italian herbs. Fresh basil adds freshness and wonderful flavor to this sauce.
Toppings – Like any classic bruschetta, balsamic glaze is MUST for this pasta salad. Generous serving of cheese – either Parmesan cheese, Romano cheese can be used.
How to make bruschetta chicken pasta salad
Step 1: Season chicken breasts with salt, pepper, garlic powder and Italian herbs as per your taste. Sprinkle seasoning on both sides, rub to spread evenly.
Step 2 : Heat olive oil in cast iron skillet. Place chicken breasts. Sear and cook on both sides on medium low flame.
Step 3 : Once chicken breasts are cooked completely, remove it on to a plate. Slice it into as small or big piece. You can even shred the cooked chicken, your choice!
Step 4 : Into the same skillet, add few more teaspoons of olive oil. Saute garlic, onions on medium low flame.
Step 5 : Add chopped ripe roma tomatoes into the pan. Saute and cook until tomatoes are softened.
Note – I added cup of halved cherry tomatoes as well. This step is completely optional.
Step 6 : Season the sauce with salt, pepper and dried Italian herbs to your taste.
Step 7 : To enhance the flavors of the sauce, a cup of fresh basil (torn roughly) is added. Saute for a minute. Turn off flame and leave the sauce aside.
Step 8: Meanwhile cook pasta of your choice as per packet instructions. Make sure to cook to al-dente.
Step 9 : To cooked pasta, add bruschetta sauce. Toss to coat.
Step 10 : Add chopped (shredded) chicken. Don’t skip balsamic glaze dripped on top.
Step 11 : Add plenty of fresh grated cheese.
Step 13 : Enjoy warm or refrigerate up-to an hour before serving. Taste delicious both warm and cold.
Expert tips to make best bruschetta chicken pasta salad
- Cook pasta al-dente. Pasta will be again tossed in the pan with bruschetta. Overcooked pasta are disappointment.
- Balsamic glaze is balsamic vinegar and brown sugar reduced down to thick consistency. You can use store bought glaze like I did.
- I choose to use a mix of ripe Roma tomatoes and cherry tomatoes in the recipe. Feel free to use just ripe Roma tomatoes.
- Top the pasta salad with plenty of freshly grated cheese. So yum! Feel free to use just Parmesan cheese or Romano cheese or a mix of both.
- A good Italian seasoning enhances the flavor and taste of the dish.
FAQS
Angel hair spaghetti pasta, regular spaghetti pasta, bow tie pasta are best choices.
While fresh tomatoes are highly recommended for this salad, you can make this dish with canned diced tomatoes too. Drain the liquids and use only the tomatoes. Remember canned tomatoes will slightly alter the taste of bruschetta chicken pasta salad, it’ll lack the freshness of fresh tomatoes.
Use multi-colored cherry tomatoes cut into halves. Looks very pretty!
Bruschetta chicken pasta can be served warm or cold.
We love it as a meal with some crusty bread on the side. If you wish to serve it as a side, serve along with grilled meat.
Store bruschetta chicken pasta salad in air tight containers in fridge. It will stay good for up-to 3 days.
To serve simply warm up the pasta salad with little olive oil in a pan and serve or if you like it cold, serve as it.

Ingredients
- 1 pound pasta spaghetti or bow tie

- Salt and pepper to taste
- 2 teaspoon dried basil
- 2 teaspoon dried oregano
- 1 teaspoon dried rosemary
- ½ cup fresh basil
For Chicken –
- 1 pound chicken breasts
- Salt and pepper to taste
