Ingredients you’ll need
- 8 oz egg noodles or pasta, pappardelle, fettucine, tagliatelle, spaghetti works
- 4 tablespoon salted butter
- ¼ cup pasta water
- ½ teaspoon garlic powder
- ½ teaspoon pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 tablespoon lemon juice, fresh squeezed
- â…“ cup Parmesan, fresh grated from block
- ½ teaspoon red chili flakes (optional)
Noodles –
Egg noodles are classic, but feel free to substitute them with pasta like pappardelle, fettuccine, tagliatelle, and spaghetti.
Depending on the type of noodles or pasta you use, cooking time will vary.
Butter –
Use salted butter. I used 4 tablespoons butter, you can reduce the amount of butter to your preference.
Parmesan –
Use freshly grated parmesan from block cheese instead of using pre-grated cheese from a bag.
Seasoning –
Salt is added to pasta cooking water to season pasta. To flavor, the dish salt from salted butter and Parmesan cheese will be enough.
Don’t skip on pepper, it’s flavor and taste.
Spices & herbs –
I used garlic powder for flavoring. You can also use fresh minced garlic if you like. Dried oregano and dried parsley add subtle herby flavor to the pasta which is crucial to balance the richness of butter and cheese.
I also prefer to add a slight kick with red chili flakes. Kick from red chili flakes balances the dish.
How to make it with step by step instructions
Bring a large pot of water to boil. Once the water begins to boil, add a couple of generous pinch of salt to the water (I used about 1 tablespoon of salt).
Add noodles(or pasta) and cook according to packet instructions. Cook pasta al-dente.
Drain pasta. DO NOT RINSE PASTA.
Reserve ¼ to ¾ cup pasta water to be used later.
While pasta cooks in water, heat another pan side by side. Add salted butter to the pan. Add garlic powder and pepper. Give it a mix. Add cooked pasta to the pan.
Pour pasta water. Grate parmesan cheese directly over hot pasta.
Add in dried oregano, dried parsley, and fresh-squeezed lemon juice.
Give it a good stir until cheese and pasta blend together.
Serve hot with extra parmesan cheese grated on top, sprinkle red chili flakes, and dried or fresh parsley. Enjoy.

Leftover noodles can be stored in air tight container in refrigerator for 5 days.
To reheat, add noodles to a pan and reheat with dash of water or milk on stove top or microwave.
