These 2 ingredients strawberry mango popsicles are fabulously refreshing and perfect for hot days. Warm days ahead and we canโt think of better way to cool off with this delicious naturally sweet fruity popsicle! These are refined sugar free, diary free, vegan, healthy fruity popsicles.
Hull strawberries and chop them into pieces. Blend it in a blender or food processor until you get a smooth strawberry puree. Add ยฝ to 1 tablespoon water if needed.
Remove mango pulp. Blend it in a blender until it's smooth.
To make distinct layers on the popsicle, pour strawberry puree first alternating with mango puree. You can add as many layers as you like.
Cover with a popsicle mold lid and place it in the freezer for 15 minutes.
Remove from the freezer and insert the Popsicle stick now.
Freeze overnight or for 6 to 8 hours until completely frozen.
When ready to serve, remove the mold from the freezer and dip the mold in warm water for 5 to 7 seconds. Then gently pull the Popsicle out holding on to the stick. This should help the Popsicle come out of the mold easily without breaking.
Notes
To complement the fruity flavors, add a bit of lime juice to mango puree(juice).
Allow the popsicle to freeze and set completely before trying to unmould it.
Change things up, Strawberries can be substituted with raspberries. Use mango yogurt instead of fresh mangoes. Add fresh slices of fruit like kiwi, and strawberry slices into the popsicle molds before pouring in the fruit puree. For sweetness stir in sugar to the fruit puree.
