Easy Refried Bean Dip

Easy to make refried bean dip is so delicious you won’t be able to stop scooping your nachos in it. With cream cheese, sour cream, refried beans and loads of cheese and taco seasoning this Mexican dip is our new family favorite! It’s perfect to eat with nachos, chips or any Mexican dish.

Ingredients

  • 16 oz refried bean canned or homemade
  • 4 oz cream cheese softened
  • ½ cup sour cream
  • 4 teaspoon taco seasoning
  • ¼ cup mild green chilies drained and chopped
  • ¼ cup jalapenos deseeded and chopped – adjust quantity according to your taste preference
  • 2 green onion white and green part separately chopped
  • 1 ½ cup Monterey Jack cheese freshly grated, divided
  • 1 ½ cup sharp cheddar cheese freshly grated, divided

For Garnish

  • Fresh cilantro
  • Green onion
  • Pico De Gallo optional
  • Few Jalapeno slices

Instructions

  • Pre-heat oven at 350°F. In a bowl add refried bean, softened cream cheese, sour cream and taco seasoning. Using a stand mixer or a hand blender or whisk beat it together until combined. You want to have a smooth mix.
  • Add mild green chilies (drained and chopped), jalapenos (if using), white part of green onion and half of both Monterey Jack and sharp cheddar cheese.
  • Mix it all together.
  • Use any baking dish such as 8x8 inch square dish or 2qt baking dish. Grease it with cooking spray (optional).
  • Spread bean dip mix on the dish.
  • Sprinkle remaining cheese on top evenly.
  • Bake in pre heated oven at 350°F for 18 to 20 minutes or until hot and cheese is melted and bubbly.
  • Serve hot with tortilla chips. You can also use protein-rich refried bean dip in other Mexican dishes such as tacos, enchiladas and burritos. Also spread them on quesadilla or on top of a tostada. It’s delicious anyway you serve!
