Raw zucchini salad is one of the easiest summer salads to make. It's light, refreshing, and packed with nutrients. Raw zucchini slices are tossed in olive oil, lemon, red peppers and garnished with pickled onion and fresh basil leaves.
Wash zucchini and pat dry it. The slice is thin. You can choose to slice them round or make thin ribbons.
In a wide bowl add all the ingredients (except basil leaves) and toss well. Pour the dressing over the zucchini slices and leave them to marinate for about 10 minutes.
Transfer to a serving plate. Garnish with pickled onions and a few extra basil leaves. Serve immediately.
