Grilled tilapia is tender, flaky, and loaded with flavor. Perfectly seasoned tilapia fillets are grilled to perfection and served with blistered tomato, a perfect healthy weeknight dinner recipe. It comes together in under 15 minutes.

½teaspoonOnion powder
1teaspoonCayenne
1 ½teaspoonsSmoked paprika
½teaspoonPepper

1cupCherry tomatoeshalved

Instructions
If using frozen fish, allow the fish to come to room temperature.
In a small bowl, mix garlic powder, onion powder, cayenne, smoked paprika, pepper, and salt.
Rub tilapia with spice seasoning on both sides.
Let it rest for 10-15 minutes, you can rest it at room temperature or inside the refrigerator.
Heat the grill and wait for the grill to turn hot. If using the stovetop method, heat the grilling pan on high heat.
Add olive oil to the pan. Reduce heat to medium.
Place seasoned tilapia fillet on a hot grill. Wait for tilapia to cook completely on one side before you flip it, this ensures the fillet does not break. It will take 3-4 minutes to cook on one side. Tilapia is more like translucent white when it’s raw, and when cooked it will turn solid white, when it turns solid white you can flip it.
Flip and cook on the other side. Remove grilled tilapia on a plate.
Optional step – in a skillet add 1 teaspoon of olive oil. Add halved blistered cherry tomatoes to the skillet. Season lightly with salt and pepper, and cook stirring frequently until cherry tomatoes are softened/blistered.
Add torn fresh basil leaves to the pan and give it a mix.
Serve blistered tomatoes over grilled tilapia fish, and serve hot.
