Start by prepping strawberries. Rinse strawberries under tap water to remove any dirt. Pat dry strawberries with kitchen towel. Dice into small pieces.
In a sauce pan add diced strawberries, sugar and water. Bring it to boil. Simmer cook for 20 to 30 minutes with constant stirring and mashing the berries with stirring.
Remove saucepan from heat. Let it cool for 5 minutes.
Strain strawberries through a strainer and extract as much juice from the berries by pressing it with back of spoon. Strawberry simple syrup is ready.
Chill it in refrigerator for 2 to 4 hours.
While strawberry simple syrup chills you can steep tea.
Bring 3 cups of water to boil. Pour hot water into a kettle or jug. Add tea bags.
Let it steep for 5 minutes.Pro-Tip: depending on how strong you like your tea, adjust the time for steeping tea. If you like stronger tea flavor, steep for 10 minutes or more accordingly. Remove tea bags from the kettle or jug.
Add 1 cup sugar (adjust sugar according to taste) and stir well until sugar is dissolved.
Let tea cool down a bit.
Pour steeped tea into a large pitcher.
Add 8 to 10 cups of water (taste and add water accordingly).
Add chilled strawberry simple syrup.
Pour in freshly squeezed lemon juice.
Stir well.
Cover and refrigerate the pitcher for 2 to 3 hours or until very cold before serving.
When ready to serve, to serving glass add ice cubes, lemon and strawberry slices. Pour strawberry tea into serving glasses.
Serve immediately chilled.
