Teriyaki Grilled Pineapple Shrimp Skewers

Teriyaki grilled pineapple shrimp skewers – a FAST and EASY finger food appetizer with great ASIAN flavors. Can be served as appetizer or alongside rice as side dish.

Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 pineapple peeled and sliced into ½ inch by 2 inch pieces
  • ½ cup teriyaki sauce

For the marinade

  • 1.5 teaspoon of smoked paprika
  • 1.5 teaspoon of cayenne
  • 1 teaspoon of cumin powder (optional , please skip if you don't like cumin flavors)
  • Salt and Pepper to taste
  • 3 tablespoon olive oil
  • 1 tablespoon brown sugar
  • Juice of 1 lime

For garnish

  • Fresh coriander leaves
  • Lemon wedges

Instructions

  • Marinate the shrimp in the marinade for 10-15 minutes. While shrimp marinates, peel and cut pineapple into cubes.
  • Soak bamboo skewer sticks in water for about 30 minutes to avoid burning. If using metal skewers, ignore this step. While the shrimp is marinating fire up your grill.
  • Thread in pineapple cubes, marinated shrimps alternatively. Grill the shrimp over direct, medium heat for 5-7 minutes, turning the shrimp halfway through the process.
  • Don’t forget to slather some of the deliciousness of Hawaiian teriyaki sauce over the shrimps and pineapple soon as they come out of the grill.
  • Serve immediately. Love eating it directly as finger food, but it also great on tacos, sandwiches, meal prep box alongside rice, in salads almost in everything.

Notes

Leave the tail-on : Recommend you to leave the shrimp tail on. It's easy to handle and looks pretty too. Use large/jumbo, so they don't fall through grills.
Frozen Shrimps : If using frozen shrimps, thaw completely and drain excess water.
Small Shrimps : If you can't get hold of jumbo shrimps, small shrimps can be used. Skewering small shrimps might be challenging, use TWO skewers to skewer small shrimps so they hold it's place. Grill carefully so shrimps don't fall through the grill holes.
Cumin Powder : I personally love cumin spice and you will see it evident in many of my recipes. Please leave out cumin powder in this recipe if you aren't a fan. 
Serving : Serve shrimp skewers immediately as soon as it's grilled. If it sits for longer, it will loosen it's moisture. Serve it on skewers as finger food appetizer, or remove it from skewers and serve it over tacos, mix it in salads or use it in meal prep.
