POTATO LEEK

SOUP

You'll Need

Cook leeks in butter+olive oil

Add potatoes, bay leaf, Italian seasoning, fresh thyme, salt pepper to taste, stock

Cook until potatoes are fork tender

Remove bay leaf before blending

Blend soup using hand blender

Do not over blend the soup. Over blending will active the starch in potatoes making it gluey.

Serve loaded with  bacon & Parsley
