This refreshing summer watermelon mojito is made with a few simple ingredients and is incredibly easy to make. A perfect summer cocktail that is great for backyard BBQ parties.
Summer watermelons are the best and I love to use them in many recipes, my favorite being watermelon feta salad, and also love watermelon granita, the best summer cold soup watermelon gazpacho, spicy watermelon margarita, frozen watermelon smoothie.

Ingredients notes
- Watermelon – Seedless fully ripe watermelon is the best choice. If you do have seeds in the watermelon, don’t worry too much, you can try removing a few, it’s ok to have a few seeds on. I did not bother to remove the seeds from the watermelon, as watermelon juice will be passing through a fine mesh strainer. I also added a few frozen watermelon cubes while serving.
- White rum – white rum is best. You can also use tequila.
- Fresh mint – Fresh mint adds flavor, taste, and amazing freshness to granita. Muddle a few mint leaves to release flavors. You can swap mint with fresh basil as well.
- Lime juice – always use freshly squeezed lime juice. Lime juice adds freshness and tang to the granita. Add few lime slices to enhance flavor and taste.
- Powdered sugar (or use simple syrup)– to add sweetness to mojito you can add powdered sugar. If watermelon has enough sweetness skip sugar. Sugar can be substituted with honey or simple syrup.
Step-by-step instructions
Step 1: Use fully ripe watermelon to make watermelon mojito recipe. To cut watermelon, first cut watermelon into discs.
Step 2: Remove the outer green rind. Cut watermelon into smaller square cubes.
Step 3: Use high power blender or food processor to juice watermelon cubes.
Step 4: Pulse it a couple of times to make it into juice.
Step 5: Strain the juice, pour into glass jar and refrigerate until use.
Step 6: Muddle 15-20 mint leaves. Smash it well so all natural oil and flavors of mint is released. Do not puree mint.
Step 7: Into a pitcher add powdered sugar or simple syrup, freshly squeezed lime juice and ice. Using a wooden cocktail stirrer and stir until sugar is completely dissolved.
Step 8: Next add muddled mint, lime slices, watermelon juice, white rum. For extra flavors add more fresh mint leaves, slices of lime, few frozen cubes of watermelon (optional).
Step 9: Stir everything together and while stirring smash mint and lime to release some of it’s fresh flavors into the mojito. Refrigerate it until ready to be served.
Step 10: Into mojito glasses, add few extra ice, some lime slices and pour watermelon mojito into the glasses. Garnish with fresh mint leaves and serve immediately.
