Yay! Exams are over, finally! And I’m breathing a sigh of relief now. Daughter is been playing since the time she came back from school, after her exams. To appreciate the effort she put in revising, re – revising, over past couple of weeks, and agreeing to have limited time for play; I took her straight to pizza shop and treated her with pizza and ice cream after her exams. That is how we celebrated.
While I sit down to write the post, I am not worried about the portion that we had to revise for the last time while we sit in the bus stop waiting for bus, I am not worried about what to cook for breakfast next morning, I am not worried about daughter not going to bed on time, I am not worried about her bag pack all packed and set for her to write her exams. I must admit, the last couple of weeks have been a bit stressful. Yeah, I know she is just in first grade, and you may ask, why should I get stressed? The stress was planning out a timetable to do her revisions, so she could keep up with revisions at school, the stress was sit with her and help her in her studies everyday while simultaneously trying hard to keep the little one away from pulling her hair, snatching her pencil, scribbling in her book. The stress was to tell her that she could only have 2 hours of play time (poor thing she did not make a fuss at all even when she had limited play time). The stress was, making sure she is revising, and little one finishes his dinner on time, then she finishes her dinner on time (yeah so I fed both the kids, while daughter was studying, munching her food and try to say loud the sentences 😛 – multitasking is hard when you little one, well, that’s my experience). So, yeah, that was stressful. Now I plan to relax as much as I can and let the kids enjoy their summer vacation without any restrictions. There’s gonna be a lot of ice creams, water games, swimming pool lessons and a lot more without restrictions. 😀
Coming to Khakara pizza recipe, which I made 2 weeks back during the revision sessions. One of the days, daughter asked if I could make her a pizza. I was so tired and exhausted to make pizza from scratch which is the usual deal at home when it comes to pizza. So I came up with this simple idea of using some ready base to make pizza. I had some khakaras at home which I keep to munch on whenever I feel like snacking(usually I don’t snack on much, and once in a way I get this craving to munch something, so kept the options healthy by not stocking up the snack shelf with all deep fried, oily, un healthy snacks, but just the khakaras) To make pizza, I simply added some sauted vegetables and grated cheese over the khakaras. Dressed it with pizza seasoning and served it.
Looking at the “instant pizza” daughter first jumped in joy. She took the first bite and said, “amma, this tastes nice, like pizza” 😀 This is a real kid-pleaser instant pizza dish. Chances are that, you and your kid might like it too, so give it a try 😉
Recipe inspired from tarladalal
Ingredients
Whole Wheat khakaras
¼ cup green capsicum
¼ cup red capsicum
¼ cup yellow capsicum
2 tablespoon broccoli(optional)
½ onion, sliced thin
1 tomato, chopped
1 teaspoon oil
Oregano
Red chili flakes
¼ cup mozzarella cheese
Method
- Chop all 3 capsicums into small bite size cubes. Chop tomatoes into small pieces. Onions to be sliced thin. Grate mozzarella cheese and keep aside.
- Heat 1 teaspoon oil in a pan. Add chopped capsicum and sauté for about 1 minute. Next add small florets of broccoli and cook for a one minute. Add little salt to taste, mix well. Turn off flame and keep aside. We want the vegetables to cook a bit but still be crunchy. So do not overcook these vegetables.
- Place a khakara on a serving plate. Add the capsicum broccoli on top. Add few spoons of chopped tomatoes and sliced onions. Sprinkle good amount of oregano, red chili flakes and other pizza seasoning you like to add. Finally sprinkle the grated cheese on top. Khakara pizza is ready.
- Serve immediately.

I have seen Khakara in Indian super markets here, but never thought of trying. If I can make such an amazing pizza, I think I need to try it soon 🙂
