With BBQ grilled chicken and grilled potatoes on the side, and sour cream to slather it on, I’m thinking that’s gonna be your favorite camp-fire meal.  Why don’t you give it a try and see if you agree! Try it with grilled lamb, steaks, pork chops.
5. You only need some simple basic ingredients. Garlic, fresh herbs, salt and pepper, cheese.  Simple, but the best way to flavor potatoes.
6. You can throw in a cube of butter as well for rich, super tender, delicious grilled potatoes. We skipped on butter, instead used some olive oil. Red potatoes are great for grilling. This recipe uses a mix of red, purple skin and yellow potatoes.
7. This grilled potatoes in foil packets is so versatile, you can adapt and change it as per your preference and availability of ingredients. Flavors, seasonings can be changed. Think of simple flavors like rosemary, butter, salt and pepper, or some zesty flavors with lemon, chili and garlic.

  1. Dice potatoes into 1 inch cubes. You can use a mix of red and yellow potatoes.
  2. Into a large bowl add diced potatoes and all the ingredients  – olive oil, minced garlic, thyme, rosemary, salt, pepper, cheddar cheese and Parmesan.

Notes

  • If you want crispy bacon bits, considering frying bacon in a pan first and topping it after potatoes are grilled in foil packets. This will keep bacon crispy.
  • From my experiments I noticed, grilling potatoes along with raw bacon in oven did not turn it into crispy bits. But it was delicious though.
  •  Place a cube of butter over the potatoes, before folding the wrap to close. Butter will give it rich taste and potatoes turns more delicious! This is optional step.
  • Don’t forget to pierce tiny holes into the packets. It’ll let steam out while grilling.
  • On fire grill – 20-30 minutes, avoid placing it on direct flames.
  • To bake in oven – at 375 degree F for about 40 minutes or until potatoes are tender.
