This is one of the most common stir fry side dish we make for day to day lunch. Most common combination of vegetables, carrot + beans + cabbage. It is also one of the most reliable dish to clean up your fridge stock.
I had some childhood problems, some real BIG childhood problems.
No, I’m not talking about the frequent sinus attack that I used to have (Oh I still have that even now)!
Not even the scary “alien” doctors with creepy needles!
No, not that game which I struggled to get it right while all my friends could solve like a piece of cake( a game in which you have to draw a 8 lined house like structure which is supposed to be done without lifting the pen and not going through the same line)! Not that.
But, it was all about eating my V-E-G-E-T-A-B-L-E-S!
Mom used to make at least 1 vegetable side dish for lunch. Dad always insists us to eat a lot vegetables. While growing up I did not like vegetables. I always pushed it to the sides of my plate. Most of the time, vegetables from my plate would end up in mom’s plate after my lunch, cause I would have never touched it! I would have managed to eat all rice and sambar on my plate, but the vegetables. The vegetables from the sambar, the stir fry vegetables, that was my problem. Before popping food in my mouth, there is this BIG task I set to myself, to pick and separate all vegetables from the plate. The brinjal that was hiding in the center of the pile of rice, the stir fry vegetables which mom mixed into the rice, assuming I would eat it all(she assumed I’d be lazy enough to separate them). All of these vegetables have to be picked and pushed to the side of the plate. And only after that I would start eating my food.
Now I see the same pattern in my daughter. At that point of time I put on my parents cap, just like my mom and dad did, and insist her on eating her vegetables. Initially she would refuse to eat, but slowly we have started telling her how vegetables will make her strong enough that she will be able to win the running race in her school. She really wants to win the running race that the school conducts, but poor thing she is not as fast as others. And when she comes to me and asks why is she not able to win, I first tell her, “it’s ok if you don’t, win, you tried, that’s good!” She gets angry and asks me again, “no amma, I want to win!”. So one day when she asked the same question, I said this to her “if you don’t eat your vegetables, you won’t become strong and you won’t be able to run fast!”( She was just 5 years than :P). It seems like she has taken it serious, and now tries to eat her vegetables, a little atleast! 😀 Now all the veggies I am feeding her, better make her win some race soon! 😀 😛 I can’t make up more stories later again! 😀 I’m running out of answers already! 😉
1 carrot, finely chopped
10 beans, finely chopped
¼ cabbage, finely chopped
1 large onion
2 green chilies
Salt to taste
½ teaspoon mustard
1 teaspoon urad dal
1 sprig curry leaves
2 dried red chilies
1 tablespoon oil
Water as required
- Cook all vegetables with a pinch of salt. Once fully cooked, drain any water in it and keep aside. Do not throw this water, drink it up as soup (with our without seasoning it) or use it in make chapathis and other curries.
- In a wide pan, heat oil. Add mustard seeds and let it splutter. Add urad dal, curry leaves, dried red chilies and sauté.
- Add finely chopped onions and cook till onions turn soft.
- Add cooked vegetables, check for salt and add if required.
- Cover and cook for 5 minutes on low flame.
- Serve it hot as side dish for rice and sambar.
P.S – Highly recommend to add fresh grated coconut in the end to make this poriyal even more tasty. I did not have coconut stocked, so I skipped it.
