Aviyal is a staple Kerala dish which has loads of vegetables in it. Traditionally Aviyal is cooked vegetables with coconut-green chilli paste in it, that’s it, nothing else. It tastes delicious and goes perfect with red rice(Kerala rice) and sambar. This recipe is my version of Aviyal and I used what all I could find in my fridge.
You can use vegetables like carrots,elephant yam,plantain,pumpkin,eggplant(brinjal),drumstick,beans etc to make Aviyal
Vegetables of your choice, cut into long pieces(about 2″)- 3 cups
Turmeric powder-½ tsp(I did not have stock of turmeric powder, so didn’t use, that’s why you see my Aviyal white, Please don’t miss this ingredient – gives a nice color to the dish)
Grated coconut- 1 cup
Green chilies- 2-3 nos
Cumin seeds-½ tsp
Curryleaves- 2 sprigs
Coconut oil- 1 tbsp
Salt to taste
Let’s see how to make Kerala dish – Aviyal
Method of Preparation:-
Coarsely grind fresh grated coconut,green chilies ,cumin seeds and shallots with little water.Keep aside.
Cook the vegetables with just enough water and turmeric powder,on medium flame.
When the vegetables are cooked (do not over cook) add the coconut mixture and salt to taste stirring carefully.
Cook for 2 minutes till dry on low flame.(If you prefer to make it little gravy type, add few tspns of yogurt and mix well, turn off flame immediately)
Finally add curry leaves and coconut oil.
Serve with rice
