- Zucchini
- White balsamic vinegar
- Lemon – juice and zest
- Fresh red chili peppers

- Sea salt
- Basil leaves – for garnish
- Pickled onions – for garnish

Ingredients substitutions
You can use any type of fresh red peppers you have. Thai red chilies or Fresno red chili peppers can be used. If you can’t get fresh red chili peppers feel free to substitute with fresh jalapenos or pickled jalapenos.
White balsamic vinegar is highly recommended, if you can’t find it substitute with white wine vinegar or rice wine vinegar.

📋Raw Zucchini Salad
Ingredients
- 2 large zucchini
- â…“ cup white balsamic vinegar
- Juice of ½ lemon
- 1 teaspoon lemon zest
- 1 fresh red chili pepper deseeded and diced
- 2 garlic cloves minced
- 2 tablespoons extra virgin olive oil
- Sea salt to taste
- Basil leaves – for garnish
- Pickled onions – for garnish
Instructions
- Wash zucchini and pat dry it. The slice is thin. You can choose to slice them round or make thin ribbons.
- In a wide bowl add all the ingredients (except basil leaves) and toss well. Pour the dressing over the zucchini slices and leave them to marinate for about 10 minutes.
- Transfer to a serving plate. Garnish with pickled onions and a few extra basil leaves. Serve immediately.
